    Just had a tough weekend & feel like lots of people want things from me/are expecting me to be a different way to how I am. I can't seem to get it right atm *insert wry-faced shrugging smiley thing here*!

    I've just been for a walk, whilst not wearing my jacket (its the summer after all) I have been wearing a heavy fleece and my fleece hat.

    Loaded potato skins -

    bake potatoes for approx 1hr - 1 1/2hrs at 200c

    As soon as can handle, scoop out flesh from the skin and keep the husk like skins in halves

    Add 200g grated strong red leicester or chedder and 250ml sour cream and stir well

    Add lots of salt and pepper and 4 chopped spring onions

    Refill potato halves, sprinkle with approx 25g of grated cheese and bake in oven for 20-30mins at 200c

    Easy to make in advance

    Bake potatoes and scoop out flesh - leave to cool and cover

    Then next day make up filling and cook as above

    OR Make up with filling and refridgerate for up to 2 days and cook as above

    OR freeze

    MAKES 20 Halves - yummy
