I finally got round to making bread pudding yesterday, using Morlandbanks recipe above. I was getting sick of all the bags containing leftover bits of HM bread sitting mournfully in the freezer taking up space that I will need for Christmas and the final straw was finding some dried apricots that were past their sell-by date. I took out one of the bags containing ends and crusts and did as the recipe said, not holding out a lot of hope. ( I make my bread using a mixture of white flour, wholemeal, oats, flaxseeds and sunflower seeds.) Anyway, when I took it out of the oven it did not even have time to cool. OH and DS had polished off more than half the loaf before I even got a taste. It was truly delicious and now I am glad that I have a few more bags full of bread bits to use up, and will happily gather together all the odd scraps and not care if everyone thinks I am a mad meanie! (BTW, OH said it reminded him of the dumpling (is this a Scottish term - cloutie dumpling?) his mother used to make.)0

stuffing: turn the bread into crumbs as described earlier (or alternatively soak in water or milk then squeeze dry if too stale and hard), mix with fresh or dried herbs, chopped onion, salt and pepper, a little shredded suet or melted margarine or dripping, an egg to bind together if necessary (ie if ingredients are dry), much nicer than the packet sort, and you can adapt it for different meats, or according to what you have. I made some once with a few of those ready to eat prunes chopped up in it (they were lurking at the back of the cupboard) to eat with pork. It was really nice. I guess you could use other dried fruits too, such as apricots, but if they are not the ready to eat sort, you would have to soak them first. You can use the stuffing to stuff the meat or chicken, or bake it in the oven as an accompaniment (about 30 mins).0

Actually, your bread sounds similar to what I'm tending to make at the moment and it's stopped me from trying a bread pudding because I wasn't sure how it would come out. If it's only slightly dry (a day or two past it's best) I like to make fried bread.
Soak slices of bread in some egg mixed with a dash of milk, salt & pepper & lightly fry till brown... delicious.
This makes a lovely teatime treat or supper.
Serve either with maple syrup or with beans & perhaps even sausages!!!Ladymac0 -
I made homemade burgers the other day (don't ask :rotfl:) and we've got 6 muffins that are probably on their last legs but it seems such a waste to throw them away, especially when we are really struggling for money and i've been using cookingbynumbers all week just to make a decent evening meal out of what we've got in
So my question is obviously, what can I do with these muffins? They're just normal white muffins from Aldi?

I should have thought you could freeze them. Even if kept just in the fridge, they should last a day or two longer.some people grin and bear it, others smile and do it0

Why not use them cut in half as mini pizza bases for tomorrow's meal? They are basiclly a bread after all. You could mash up a tin or two of mackarel fillets in tomato sauce. Then spread muffins with tomato ketchup, sprinkle a few herbs on top spread out the mackarel top with cheese and pop in warm oven till hot and cheese all melter and starting to brown. Toast them and eat for breakfast with butter and jam or golden syrup, make into sandwiches, toast and eat with baked beans, scrambled eggs etc -they're just bread after all0
