    TakeItEazy - is it this one?

    Thai yellow vegetable curry

    Serves 4
    Ready in about 25mins

    For the yellow curry paste:
    1-2 green chillies, deseeded & finely sliced
    2 shallots, finely chopped
    1in/2.5cm piece fresh root ginger, grated
    4 garlic cloves, crushed
    1 tsp ground coriander
    1 tsp ground cumin
    1/4 tsp ground cinnamon
    3 tbsp dark soy sauce
    1 tsp tumeric
    1/4 tsp artificial sweetener
    4 kaffir lime leaves, snipped into small pieces (discarding the central stem)
    3fl oz/100ml half fat coconut milk
    14fl oz/ 397ml vegetable stock
    1 lemon grass stalk, finely chopped

    For the curry:
    7oz/198g baby sweetcorn
    1 medium aubergine, diced
    2 courgettes, diced
    1 red pepper, deseeded & diced
    A handful of fresh coriander, chopped
    Boiled rice to serve

    1, Place all the yellow curry paste ingredients in a food processor & blend until smooth. Transfer to a medium pan & gently bring to the boil
    2, Add the sweetcorn, aubergine, courgettes & red pepper. Bring back to the boil, reduce the heat to low & simmer gently for 10-12mins, stirring often until vegetables are cooked.
    3, Remove from the heat & stir in the coriander. Divide between four serving bowls & serve with boiled rice.

    Syns per serving:
    Green - 1.5
    Extra Easy - 1.5
    Original - 13.5

    I think it is. I found this on minimins and it said on there it was from the Jan/Feb issue :)

    i lost my 2lb this week taking me to my 3 stone 1 &1/2 so very pleased..
    its my star week to. i was slimmer of the week too! yippie. eat lots of food at slimming world tonight, as it was a party week, as our consultant is leaving. :(

    I can confirm that the chocolate cake is indeed very yummy with 50g of Asda's Good for You vanilla ice cream (3 syns) and strawberries. Mmm...

    Recovering Spendaholic - no idea if you can freeze it really, I'm no expert but I can't see why not? Personally the next time I make it my plan is use a brownie tray, cut it into 9 pieces and then I can munch away knowing each slice is just 1 syn.

    Be careful with the Depro. I had 2 jabs and put on 1 stone in 6 weeks. I was hungry all the time and had to eat all the time. I went back to the docs to say I was not having it again and told her about the weight gain and she said 'that is because it gives you pregnancy hormones'. I was mortified but I did go on to lose the weight I'd put on.

    Just to make you aware that this is why you put on weight, because it makes you hungry.

    Morning everyone

    Well done on the losses everyone -and :T julesangels on hitting 3st :T

    My meals for today are :-
    • 250ml semi milk -(A)
    • 2 weetabix (B)
    • apple
    • cold potatoes
    • chicken
    • salad
    • gammon steak
    • steamed potatoes
    • broccoli
    • carrots
    • peas
    • sweetcorn
    • 28g low fat cream cheese (2.5 syns) -let down with a drop of my milk allowance and warmed up to make a light sauce ;) -and out here I can get some great varieties :D
    • Inbetweenies -will be fruit
    We are going for a walk around the lake when hubby gets home from work -so thats a little exercise done ...

    Thank you- I know. I have only been on it for 3 days and I woke up again craving craving craving.

    I need to make a "loose start" by trying to eat as much protein as poss, I think breakky will be eggs in frylite, mushrooms and a tin of beans. Blinkin starving. The more protein I eat the less hungry Ill be ( she says)

    Maybe starting this in earnest on Sunday but loosely following until then. There are jaffa cakes calling my name but IM going to resist any junk until 1.pm (she says)

    Hi all, I've had a horrible morning. Someone at work has been killed in an 'accident' this morning don't know all the details but its very sad. I didn't know him but its still upsetting.

    I'm having an EE day today again:

    Breakfast - porridge and a scan bran plus a pear and a plum.
    Lunch - salad, sw quiche, chicken and barley soup.
    Tea - chicken curry, rice, salad

    syns - salad cream, curry sauce (not sure how many yet).
