German bread is supposed to be heavier (and more nutritious, btw, but I know it's not what we are used to over here). This seems to work by any method for me.
If you have 5 minutes to spare. (scale up or down as necessary)
1lb strong plain flour. I've used Doves Farm, Waitrose, Sainsburys, Allinsons, generic from Chinese Supermarket.
1tsp sea salt
1 tsp sugar/honey/syrup/agave
1 tbls olive/hazelnut/safflower/rapeseed/corn/sunflower/grapeseed oil
1 tsp yeast/1 sachet easy yeast.
3fl oz boiling water, 6-7 fl oz cold water in jug. More in hot weather, lower amount in cold.
Whilst weighing stuff out, put yeast and sugar in cup with splosh of warm water from jug. Whilst chucking stuff into mix, leave this til last with water.

Hi, I have the KH 1171 Bifinett (mine was made by Silver Reed) and it works absolutely beautifully using the supplied recipe book. I'll give you two basic recipes from the book.
Program 2 "Classic" White Bread.
320 ml water/milk
2 tbsp butter
1.5 tsp salt
2 tbsp sugar
600 gram white bread flour (Lidl's is fine)
1 packet of dry yeast.
Place the ingredients in the baking tin in the sequence listed in the recipe. Set programme 2, 750 gram weight (middle setting), choose your browning level and then start the machine.
If you want to remove the paddles, personally I wait until it reaches the second rising period, just after the second kneading. Stop the machine, take out the tin, shake out the bread mix and remove the paddles. Replace the dough into the tin, even it out carefully, restart the machine and bingo!
Programme 3 Whole Grain Bread.
350 ml water
25 grams butter (or approx 1 tbsp olive oil if you prefer)
1 tsp salt
1 tsp sugar
270 grams white bread flour
270 grams wholemeal bread flour
3/4 packet of dried yeast (I use 1 packet and it works fine)
Set the machine up as per the previous recipe.
This recipe produces a really tasty loaf which I highly recommend.
I had a spares order card with my machine, but you can telephone DES UK Ltd on 0870 7876177 and pay by credit/debit card. The only spares they list are 1 baking mould including 2 Kneading paddles for £7.00 or 4 Kneading paddles for £7.00.

I have a Bifinett BM; the same one as as the lady who started the thread in 2006; which I used only twice due to the same problems she experienced! I also have a Panasonic and a Kenwood BM! I wouldn't say Im a fanatic or anything but I do have one issue with all the machines. The first part of that issue is that I have to make gluten free bread. Now, while I can make perfectly good gluten free bread by hand, for time saving's sake I would love to make it in any one of my bread makers! However, the on-going issue is that, even the Panasonic and the Bifinett both of which have gluten free programs wont make my bread properly because they have this 'gas release' function where the paddle/s turn several times during the rising process. This is very, very annoying because gluten free bread is quite sensitive and reacts violently to that disturbance as only one rise is required. Initially, the dough rises beautifully, then this 'gas release' function kicks in which makes the dough sink and then there isn't enough resting time after that to enable the dough to rise again!
I thought the Panasonic would work on a Rapid Bake setting but half way through the rising process I discovered this too has the 'gas release' function and although I stopped it, rested it for 40 minutes and put it onto the bake only function it still pancaked in the centre. Having said that it was a lovely flavour and it took on a 'ciabatta' type texture, which is not entirely a bad thing, but I really do want to have a good 'normal' loaf result... one day.

I've never attempted gluten free baking with a breadmachine. If the punch down function keeps messing up the rise then I think theres only one alternative - a decent standmixer. We have a Kenwood K-Mix and I use it when I want to bake "by hand". It kneads bread dough beautifully! Leave to rise in a warm place (airing cupboard or such like) and bake in the oven. Not all in one but the results are a tastier, better shaped loaf even with regular flour.0

Thanks very much brynaird for typing all that out, you're very kind. And thanks to everyone else too, for replying. I tried to return the machine as I think it's faulty, but couldn't find the receipt, so in the end I gave it away (it may have been scrapped by now).
I'm thinking about having a go at bread-making the traditional way (only thinking about it, mind).

Was wondering if anyone out there had bought the biffinet bread machine from Lidl last year. I've been making bread quite succesfully but things have taken a down turn over the last few weeks and I'm not sure why.The bread looks as if it has risen but then sunk during the latter stages of baking. Tried altering the amount of honey (sugar), salt, water temp (cold and hotter) but have same result!
Recipe used (in sequence and using the measuring cups that come withthe machine)
3 Large spoons of oil (vegetable)
2 Large spoons of Honey
1 small spoon of salt
1 cup of warm water (open hot tap - as soon as water starts to feel warm - use)
500g of Allinson Premium Wholemeal Very Strong Bread Flour
1 sachet of Allinson Easy Bake Yeast
Switch on machine, programme 3, 1lb loaf lightest crust setting.
Any help will be greatly appreciated.

I have a BIfinett vbm 300 the one with a large pan and two paddles. Just wondering does anyone eles have this machine and if so have you made cakes in it.0

Havent baked cakes but have made brioche and sweet breads which turned out fabulously. I'd make cakes by hand if I were you as you will end up with a loaf shaped cake with paddle holes (unless you take the paddles out of course!). Happy baking!0
