:rotfl:sorry kez I'm going to be annoying now and say that's an older version that doesn't fit the bob and shirl shopping list :o. You were trying to be helpful too:A

It's very nice though! But I will post the proper one today. :D

    butternut squash risotto

    160g butternut squash
    500g rice
    80 ml oil
    80g mature cheddar
50g dried peas, soaked and cooked as per packet instructions (100g if using tins to save time)
    3/4 litre stock
    the usual spices :)

Make up the risotto on the stove and roast the squash in the oven with the skin on, sliced as thinly as you can manage at about 200C with a tsp oil and salt on. put on top of the risotto when cooked. and a little caramelised. Non stick teflon baking liners are great for things like this so you need less oil
:) stir it in at the last minute.

Use half the oil to start the risotto off (add peas, add rice, add
3/4 litre stock), and the rest to drizzle over the finished product. Cheese- stir half in with the squash, sprinkle the rest over the top. Add salt to taste, and plenty of freshly ground black pepper.

hi arty, thanks for the feedback on the above method :D

could you and mr arty add in any other instructions which you feel would make it clearer?

I'm not sure if it's worth asking this as I know everyone has very busy lives! Is anyone willing to get some of the recipes shipshape for publication? there are lots and I can't do it as well as sort the website out, figure out planners 2 and 3 and keep things going on here as well as real life commitments.

Even just volunteering to take on 2-3 recipes and make them superclear would be a huge help.

    big massive
thanks if anyone is willing to do that:D:D:D:D

I made veggie burgers the other week using Frankie's recipe from the 1st thread (tin of beans & mashed potato, mostly). Spectacular failure...tasted delicious, but so squidgy and soft that they just ooze straight out of the bun/bread and don't hold any shape. I turned them into open-faced burgers instead. Hope your recipe turns out a little more solid, weezl.

okey dokey, back with veggie burgers for bob and shirl:

    250g carrot, grated
    265g onion finely chopped
1 can kidney beans, drained and roughly mashed with a fork
    7g garlic
    1 dessertspoon garam massala
    1/2 teaspoon salt
    1 teaspoon mustard powder
    1 dessertspoon oil
    80g ready brek
    55g SR flour

combine all ingredients in a bowl and scrunch the mixture together to form a dough-like consistency.

allow to stand for as long as you can. It will seem too dry at first, but the juices from the carrot and onion will emerge and get combined with the oats.

Heat lard in a non-stick frying pan, and on a low heat cook tablespoon sized splats of your mix.

mine weren't too oozy Aless, they were soft in the centre, but could still be part of a sarnie with Ketchup :)

for tomorrow night, testers please have these with either HM wedges or Allegra's potato salad, and a HM tomato relish made with 1 can toms, 80g onion, 10g sugar 1 tbspn vinegar and spices to taste :D

Really sorry it's taken a while to get this one to you :o:)

    Hi all :hello:

Just popping in to say that I am still reading and enjoying this thread very much.

As a veggie myself I'd definitely be up for trying out some of the veggie/vegan recipes.

Weezl, also if there are any tasks I could help out with then let me know :)

Keep up the good, inspiring work!:T

These look nice and I guess you could make them with any type of beans too if you didn't like kidney beans. Understand why you chose kidney beans though, they are so much cheaper than the other beans aren't they.
I made the new nut roast recipe tonight and its was delicious. I didn't use white bread though, but all other ingredients the same. Yum.
