Ok butternut risotto-
I halved all the ingrediants as it was just for the two of us. There was plenty of rice and I can see why this would have been much too big as a lunch. I did everything as the recipe stated but did add a few chopped mushrooms that were left over as they were nearly off.
It was really good-we both enjoyed it and although feel full dont feel too bloated or anything.:p:)
So all in all a good recipe. :T
However I think HOW to make a risotto needs to be made clearer-I had to google it as I wasnt sure and all the recipes were talking about butter and other yummy things not on the planner. So I was a bit confused. All I did was fry the rice then add stock till it was all gone-we did have to add loads more stock and water till the rice was cooked but I think that was probably due to me not really knowing what I was doing:o (oh and mr arty insisting he knew exactly what to do when he hadnt a clue either:mad::D)
All in all a yummy meal but more clarification would be good.:cool:

well done arty and lol re mr arty's helpfullness!! Problem with risotto is that its one of those dishes that people do differently...you can faff and stir all the time but I think that takes the hear out of it..I usually just use stock with mine and leave it be! Nobody has moaned yet. Mind you not sure about butternut risotto as I a bit funny about food texture (ie ts a bit slimey pour moi!!Nerd no 109 Long haulers supporters DFW #1! Even in the darkest moments, love and hope are always possible.0

I decided to make my bread and snacks last night and so today I just have the dishes to do...it feels a bit calmer!
I've made my last carrot cake....and I made some sweet scones, but I'll probably make another batch of those before the plan finishes. We prefer those to the biscuits and no one has really fancied the savoury/tomato scones at all so I haven't made those.
I have still managed to not go to the shops and buy anything and as we are so close to the end I'm going to try to keep it like that.
I had to throw out a few carrots yesterday and an orange but apart from that, no problems....I do have enough lard to cross the channel though..not sure what I'm going to do with all of it.0 -

I know the feeling its not something i normally buy either but i suppose i will find a use for it eventually. A few of my carrots are looking a bit off but i made a small batch of carrot and onion soup as i have tons of onions left. The pots are starting to look a bit past their best as well and got my use out of the lemons for the stuffing yesterday so all in all not too bad.
Well done on your cooking splurge Frankie sounds like you achieved a lot.

If it helps I put two cups of liquid to one cup of Basmati rice. I don't know if that changes with other types of rice but it will not be far out.
I did not come online at all yesterday as we had a family and friends day. Very relaxing.0 -

Shanks and frankie, I was just wondering why you hadn't frozen the carrots and potatoes once blanched? Or are you both going to do more carrot cakes with them? If it's that then I was just going to say you could either grate and then freeze the carrot (for the cake) or make and freeze the cake- IYSWIM?
Sorry to butt in on that again, but I hate food going to waste so I'm trying to offer tips to prevent that!:)

hiya frankie, just had a close inspection of the spreadsheet to see if I can help on the extra stocks of lard front. I think it's because of the savoury snacks. The raisin scones and carrot cake will use more of it up though, as will the biscuits. (did you try those again after dd made them or were they not so nice?:))

Hi all, been busy all weekend moving my sister, so could follow the meal properly.
We did have HM pizza , which was lovely. The boys cheekily added the last pack of cheese :mad: and the ham for pack lucnhes. Typical eh?! so had to buy more cheese and ham at the weekend. So thumbs up for the recipe.
OH decided he was making sausage and chips, as i was too ill to eat or move, my back is still hurting me owwww

650g potatoes boiled and coarsely mashed with their skins left on
half a can of asda SP baked beans
the half a jar of drained red cabbage you have left if you made my chutney! cut up into little dice
knob of buttery spread
garlic scant half teaspoon of chilli powder
lots of ground black pepper, generous pinch of salt, dessertspoon of mustard
flour to coat your hands in to form into patties
mix together well, then coat your hands with a little flour to form the patties.
oil to fry
