my aunt is spanish and iv watched her make this though never tried it myself....she tipped it on to a plate and then back into the pan...tastes fabonwards and upwards0

hi everyone,
have surplus of eggs at the moment and looking for ways to preserve for future use. at the moment im filling the freezer with quiches etc but getting stuck for other ideas.
can i freeze spanish omlettes/normal omlettes ? family love these and does anyone have anymore ideas of what i can do with egg?

My first job when i left school, only a temp one for the summer, was smashing eggs.
Place down on the docks in Liverpool use to get all these eggs, it was horrible some of them had come from places like Bulgaria and had maggots all over them and they stunk.
All the lads had to unpack them throw them on the belt and the women separated them and put them in containers then we had to take them to the freezer.
So places like Sayers could buy them frozen either just whites; just yolks; or full mixed frozen egg to make up cakes'
So why don't you do the same, don't bother making things that will take up room in the freezer, just freeze the eggs once you've smashed them.Liverpool is one of the wonders of Britain,

thanks for that sailor sam, never realised you could freeze them at all. as you say certainly would save the freezer space. will give it a go-hubby will probably think ive gone crackers though if i start smashing eggs all over the kitchen !!!!!sealed pot member no :081

Pickle them?
(not that I've ever had a pickled egg,mind)
they can also be preserved in isinglass - I know this because I read about it in a Mrs. Beaton's book once. A has been said,you can freeze egg whites.
If you foregt to label how many there are,one egg white weighs about 40g.
What about making lemon curd?I have a recipe if you're interested.It not that complicated to make and once you have tried HM,you'll never want any other!Once made (using fresh eggs) it keeps in the fridge for three weeks,but you can also freeze it.
I hardboil eggs if they're approaching the use by date.That way they keep a bit longer,plus I love egg mayo sandwiches.0 -

thank you everyone lots to look at and sort, and just been in the greenhouse and have a huge bowl of assorted tomatoes too!
everything seems to get a glut at the same time but desparate not to waste anything.
marmiterulesok- have made lemond curd before absolutely delish... how long can you freeze it for?
