Spanish omelette recipe, please

    A "proper" Spanish omelette only has potatoes and onions, but no reason you can't add peppers if you want to :)

    I dice the potatoes or slice them very finely (like you would for dauphinoise) and finely slice the onions and cook them very slowly in olive oil in the frying pan till they potatoes are cooked through and tender and the onions are lovely and soft, then beat the eggs with a bit of seasoning and add that, cook till the bottom and round the edges have set, and then finish it off under the grill to set the top. My particular frying pan likes 6 eggs, I think it really depends on the size of the pan.

    a spanish omlette is a great way to use up any odds and ends that are lurking in the fridge.

    my recipe varies according to what we have in - it could include grated carrot, lgrated spuds (or leftover spuds) leek, peas, broad beans, thinly slice green beans, mushrooms, bacon, chorizo, chick peas, herbs, cheese (goats is yummy if you like that sort of thing!)...prob not very authentic as a spanish tortilla but we like it.

    6 eggs makes a generous omlette for 4 - I can get by with 5. If I have any less than that I separate the eggs, whisk the white and then stir the yolk back in - it makes it seem like there's more egg

    I know it's lovely cold but there never seems to be any leftover in this house!

    I have a pack of chorizo I've been wondering what to do with so I will add some to my omelette thanks for all the suggestions x

    I will definitely be making this again, it was soooo nice!

    I softened the potatoes and onions gently over a low heat for about 15 minutes, I added these to 8 (!) eggs that I had whisked in a bowl then added a handful of chopped chorizo, I added the lot to a frying pan and cooked gently, finishing off under the grill...perfect!

    I love Spanish omelette - it's a food of the gods, IMO.

    For me, Diflower's recipe is the classic and authentic version. And there's something incredibly satisfying about watching the omelette take shape as you turn it from the pan to the plate to the pan to the plate etc.

    Jamie's recipe is a very recent addition to our family recipe collection. Wow! Love that 'kick' the rosemary gives it (and am lazy enough nowadays to appreciate the beautiful simplicity of popping it under the grill to finish it off, rather than turning it from pan to plate etc).

    The family also enjoys the classic version with added chorizo. And we'll try out Jamie's version with added chorizo very soon.

    I have a good idea what we're having for dinner tomorrow! Thanks to all for reminding me about this fabulous dish :T

    Hi!
    I live in Spain and the way we make it is really simple:
    Boil up thinly slice potatoes and put them into a frying pan with olive oil and 2 eggs beaten and salt and pepper just keep moving it inwards with a spatula like you would a normal omlette. When cooked place under the grill for a few minutes to brown the top

    I often keep mine simple, just potato, onion, garlic, milk and egg. However the other day I had some left over rocket, so i chopped it up and threw it in, tasted amazing :)
