    my sponge recipe says 7 inch diameter sandwich tins, if you want the sponges to rise dont buy shallow sided ones but a bit deeper sided also all in one recipes usually use soft marg

    I found myself thinking of you this morning whilst 'escorting' my mother round Morrisons. She likes to take her time, bless (age 75), so it leaves me plenty of time to browse. Electric hand-held mixer available at Morrisons for £5.99. In fact, you should be able to find all your baking requisites there quite reasonably priced. Does your mum live nearby? Perhaps you'd better borrow the stuff and see if you think you'll make use of it before investing?

  • Ok, just a couple of questions regarding ingredients. Firstly, sugar. There are lots of different types, and I'm not buying them all. I'm prepared to buy one brown and one white. Which should I go for? :confused:

    Secondly, butter. I usually buy Clover as it has a decent taste and spreads from the fridge. Is this any good for baking, or shall I just go and buy butter (unsalted I think someone mentioned)? I'm not using marge as it's nasty. :p

    As for the sugar issue I use caster sugar for preference for baking as it creams in more easily. Ususally get unrefined (golden) but white or golden brown will do. Brown sugars just add more flavour - slightly caramelly I find but all will taste yummy. I also prefer butter - just get whatever's cheapest. No nasty trans fats (although lots of cholesterol I guess!)

    Morrisons is 840 times closer than me mum. (Morrisons = ¼ mile, mum = 210 miles). :think: Mind you, it's her birthday on Tuesday so I ought to pop home and nick all her baking stuff as a special birthday treat. :D
