It's easy to give in to that negative voice that chants "cant do it" BUT we lift each other up.
We dont count all the runners ahead of us & feel intimidated.
Instead we look back proudly at our journey, our personal struggle & determination & remember that there are those that never even attempt to reach the starting line.

    This serves 6 very generously...

You need a flat dish that will hold about 2.5litres

    Ingredients
300ml mug srong instant coffee, cooled (you can use proper coffee but it doesn't make a difference to the overall flavour so why spend the extra;))
    250ml marsala *
250g savoiardi biscuits (or the boudoir trifle sponge fingers if you can't find them)
    40g icing sugar
    500g mascarpone cheese
    40g dark chocolate, grated (optional)

    Method

Add 160ml marsala to cooled coffee.
In a large bowl beat 125ml cream with icing sugar to soft peaks, fold in mascarpone and remaining marsala (you may want to prebeat mascarpone to soften to make this stage easier and don't panic when you first start beating it in, it will look a right mess until it comes together:rotfl:)

Alternate layers of biscuits dipped in coffee mix and mascarpone mix, starting with biscuits and finishing with mascarpone (prob 2 or 3 layers of each depending on footprint of dish).

Sprinkle grated chocolate across the top (use cocoa powder/icing sugar mix here if you want) then chill for a few hours or overnight to let flavours merge.

Decorate with remaining cream (whipped) and soft fruit if you want (strawberries, raspberries...)

*To keep cost down ( a 750ml bottle marsala will cost about £6) use only coffee to soak biscuits and only use marsala in the mascarpone mix.

    Doesn't freeze
