    it's only when cooked rice is left out at room temperature that it can lead to food poisoning. If it's popped in the fridge & then re-heated thoroughly, it shouldn't be a problem at all

    I'd second the fried rice suggestions. Slice & fry spring onions in a little oil until soft. add a couple of whisked up eggs & cook until scrambled. Add your rice & reheat thoroughly, then stir through a tablespoon of soy sauce.

    If you can make a chinesey sticky sweet glaze for the chicken drumsticks, it would go with it very well I think

    I would make an egg fried rice dish. You can put pretty much anything in it and experiment with different combinations.

    Fry some onion, a few mushrooms and/or whatever other cooked veg you fancy in a bit of oil and chuck in some leftover meat or fish if you have it. Add the rice and heat thoroughly, crack an egg or two in to the pan and stir to break up the bits of egg.

    I like to add a splash of soy sauce, a drop of sesame oil and black pepper at the end of cooking. You could use fresh or dried chillies if you like spicy food.

  • I am liking the fried rice ideas, thank you guys, I knew there would be inspiration out there! Will have to do the egg either at the end or seperately as I can't have egg, but have some mushrooms, mixed veg, a pepper and some soy sauce so that will mix up nicely.I can put some egg into the rice for my DH and DD. The drumsticks have been in a marinade over night and are a sort of sticky chinesey style flavour, so it'll go really well.

    I usually make a thin omelette first, then whilst the vegand rice are frying, I slice/dice the omelette to add to the top of the fried rice at the end, almost like a garnish.

    Ah, that's a good idea. Will try that. So annoying not being able to eat what the others have!

  • Well, I did fried rice with mixed veg and soy sauce…with sliced up omelette for the egg eaters. Was really lovely and perfect with the chicken drumsticks. Thanks for all your help. :beer:
