I am going to try fried rice , it might just work if I move around the menu days so I have some squash and peppers left.

Kedgeree - add quartered hard boiled eggs, any flaked-up fish (meant to be smoked something or other but tuna works) and as much/little curry powder as you need.
Edit: oops just seen no eggs!

I make a warm rice salad type thing. Cooked rice, then chop up a tomato, handful peas, sweetcorn, cooked carrots cut into wee cubes. Any wee bits veg. Mix all together. Good squeeze lemon juice and, if you have it, some finely grated cheese mixed through. We would have it as a main dish and it is exceedingly yummy!Father Ted: Now concentrate this time, Dougal. These

I do a spanish(ish) rice thing with scraps of meat/chicken and whatever veg is around - rinse rice and leave to drain, saute finely chopped onions and garlic until soft and sweet - this bit really adds taste and takes longer than you might think - on low a good 15-20 mins does it for me. Add rice and stir around for a few minutes until coated with the oil and gone solid white - add whatever liquid you like - I use passata and chicken stock usually. Put lid on and simmer on the hob or pop to bake in the oven if it's already on. Five mins before ready add pre-cooked bits of meat - I love chicken and chorizo (Aldi's chorizo - the salami style not the fresh is fab and only £1.49) and peas. As with almost everything I make the possibilities are endless - veg like mushrooms/courgettes go in with the rice at the beginning, stuff like green beans goes in at the end. If you have saffron all the better, or smoked paprika is great, and any herbs you like.0

Fried rice would be my suggestion too. You can use any odds and ends you have to make a tasty meal.
Kedgeree can be made with tinned tuna, not quite as good as fresh fish but it does the job if necessary.

I do both a cold rice salad, and a fried rice, both of which are one of the few meals the whole family will eat. The cold rice salad leftovers can also be used to make the fried rice if necessary.
Cold rice salad
Cold cooked rice
Spring onions, chopped (you could use ordinary onions or shallots)
Anything you may have to hand in the fridge, chopped. I tend to use peppers, cucumber
Good squirt of sweet chili sauce
Just mix all together
Fried rice
Cold cooked rice
Spring onions (or as above)
2 eggs
1 bag bean sprouts
Again, whatever salad you have to hand, or tinned sweetcorn etc
Good shot of soya sauce
1 tsp chinese 5 spice powder
garlic & ginger
Fry off the onions, then add the egg and mix til cooked. Add all the other ingredients and cook through, then mix in the rice

I make a sort of Paella which is great for using up bits and pieces. Just soften some onion and garlic in a little oil, ad chilli if you like, fresh or dried, then any other fresh veg you have - peppers, mushrooms, courgettes etc and a bit of bacon or chorizo if you have it. Cook till the bacon (if using) is cooked or the veggies have started to soften. Add as much rice as you like, some tumeric if you want and salt if you're not using bacon or chorizo, and then twice the volume of stock or water as you used rice. Bring up to a simmer and cook until the rice is done (I sometimes find I need to add extra water) and then add any frozen veg or cooked meat to heat through.
You could make this with just some onion and a few peas if that's all you have but you can also add any small bits of leftovers.:DI was off to conquer the world but I got distracted by something sparkly

Some of my stand-bys are Spanish Rice, Homemade Rice-a-Roni with veg added (meat too if I have it), tomato rice (basically, rice, pureed tomatoes or pasatta, salt, pepper and cheese on top), or creamy rice (white sauce with chicken stock, salt, pepper, garlic powder and onion powder.) Personally, I would check out Hillbilly Housewife. That site has saved my backside many, many times!
