    I want to make a rice salad with little slices of red pepper, spring onions, sweetcorn and peas mixed in. What would you suggest I make the dressing from?
    Also can I just defrost frozen peas and add them or do they need to be boiled. I'm worried if they boil and then cool, that they will end up wrinkly!

    we do have a rice recipes thread which has loads of ideas., I would pop the frozen peas in a cup of boiled water from the kettle. That's enough to sort them out. Leave for a few mins :)

    My "one fits all" dressing is usually fresh chilli chopped finely, a dash of lemon juice (from a bottle, im not posh!), and olive oil. And salt and pepper of course.! Just play about until it's to your taste.

    Sure let us know what you do and ill merge this with the rice thread later

    I have lemon juice and olive oil here, no chilli but fresh herbs in the garden so will add those!

    I always keep a bag of chillis in the freezer and chop from frozen ! x

    My go to dressing for rice salad would be a bit of olive oil, some sherry vinegar and a shed load of salt and pepper. This can take things like chilli, maple syrup, mustard, honey...Go crazy!
  • Hi folks, I have a load of left over white boiled rice from last night's tea….I'd like to serve it tonight with some chicken drumsticks, but would like to liven it up a bit.
    Has anyone got any fab ideas what i can do with it, so it's not boring rice anymore?

    If i've got boiled rice left over i usually throw it out for the birds. Or i have lots of HM soup this weather, i'll throw it in there.
    As for you wanting to liven it up, some sort of stirfry.

    I wouldn't re-heat rice, I would also give it to the birds (hope that is ok)

    Mix it with chopped peppers, celery and peanuts and some lemon juice and vinegar combined with lots of reasoning for a nice rice salad.

    Or make fried rice by frying off some left over veg, adding a beaten egg and your rice and lots of soy sauce and stir frying until heated through.

    I don't think it's a problem to re-heat it.
    Whenever you do any sort of fried rice dish you use cooked rice. (well i do).
