Dead easy recipe:
300g smoked haddock or cod - cut into cubes
1 tsp olive oil
1 red pepper - diced
1 green pepper - diced
100g mushrooms - sliced
1 large or 2 small courgettes, finely sliced
225g dry pasta - shells are best but any will do
tub low fat creme freche
tin chopped tomatoes
25g low fat mature cheddar, grated
Heat oven 190 degrees
Cook pasta and drain well
Heat oil in a pan and stir fry peppers, courgettes and mushrooms, for about 5 mins
Add drained pasta, fish, creme freche, tomatoes, and season
Put in a big casserole dish, sprinkle grated cheese on the top, and cook in the oven for about 25 mins.
Serves 4, freezes well. 5 points per portion.

It freezes really well in a dish like this, and yes El, you could easily make it veggie.
I've done the same dish with diced chicken too, and also a cheap version involves replacing the smoked haddock with a couple of tins of value tunaSuccessful women can still have their feet on the ground. Thanks for posting the recipe, it sounds yummy. Fish pie is a favourite of mine too but with butter, cheese and flour - diet food it is not0

That recipe is out of the WW "Pure Points" book - I've never found any of the more recent books they have done, anywhere near as good.
