Packed Lunch for work

  • I work away from home a week at a time and usually spend just under £100 each stint.

Decided this is an area I can make savings. Can anyone give me any ideas.

I have a fridge, microwave and cupboard at both my lodgings and workplace.

I'm there for 12 hours so need to eat at least twice, and I eat a lot.

I usually have cereals at the start of my shift which is fairly cheap. What else could/should I be having?

    Thanks

    Hi Jo,

The link I gave above has hundreds of ideas that don't involve using a microwave at work so it's worth a read through.

If you want to take hot food to work, these threads may help too:

Taking hot meals when no microwave in work, anyone tried a food flask?

Tuna and sweetcorn with mayo and pasta
Layered cheese pasta salad (like the supermarket ones)
Roast chicken and mango chutney sandwiches (use leftover roast chicken)
Pastrami with thinly sliced gherkins - scrummy
pastrami with mustard mayonaise (cheap mustard mixed with cheap mayo)
Cook a gammon joint (3 for £10 in MrT) and then slice it up thinly and freeze portions to make sandwiches
If you fancy something hot, take some couscous and half a stock cube - use a mug and fill up with hot water from kettle for cheap hot lunch
Buy a quiche, cut into portions and freeze - take out on the day and they will be defrosted by lunchtime.
Muffins will freeze if you like something sweet.
You can even make up all your sandwiches and freeze them and take them out in the morning - they will defrost in time for lunch.
HM soup in a flask - they will all envy you at work!!

Think of the things you would usually buy for lunch and recreate them at home - you will save a FORTUNE!!

    Hi there,

How about some mini quiches and pasties made from leftovers. You can fill either ready made or (more os) homemade pastry with leftovers from your sunday dinner or a beef stew, egg wash and bake. You can also use left over mash and a bit of grated cheese an some fried onions. For mini quiches use a bun tin and cut circles of pastry just a little bigger than the cups. Fill you quiches with whatever you have in the fridge, spring onions, tomato, even smoked salmon (I use Mr T value trimmings, less than £1 a pack) and the usual beaten egg and milk mix. I fyou have any pastry left after these cut into thin strips, egg wash, twist and sprinkle over some grated cheese or rosemary and sea salt and bake to make straws - this works with any pastry not just puff yo just get a differnet texture.

You could also look in a party cook book or google some recipes for buffet ideas - these often work just as well for pack lunch/evening or post school snacking ideas. Think vol au vents, spiced nuts, spring rolls, hummus and crudites, it just depends what type of thing you like.

If sandwiches are getting a bit boring why not try wraps instead - you can buy them in packs in the supermarket or they are easy enought to make at home and you can put goo-ier (sp?) fillings in them.

    HTH
  • Do you have a microwave at work? If you do, take leftover from the night-befores meal - no extra work and you get a nice hot lunch!
