Homemade spanish omelette is great, my DH takes a portion from the freezer every day and people at his work are always asking for the recipe cos the smell makes them all hungry lol2 adults 4 children Eldest 14 yrs old youngest 1yr old,

you could always try making things like pasties or other pastry type things? My two favourite are chickpea & bulghar wheat curry pasties & chilli bean slice. Don't have a recipe as such but both are made with wholemeal pastry (white doesn't seem to work as well).
For the pasty filling, I fry an onion until soft & brown. Meanwhile, rehydrate some bulghar wheat in stock. Stir through a small tin of chickpeas. To the onions add a spoonful of curry paste, then mix it all together. When cool, make pasties!
For the chilli bean slices, fry an onion again, then add half - 1 tsp chilli powder (depending on taste!). Add 1tsp tomato puree & a tin kidney beans. Mash it up slightly. Add 1/2 tsp sugar. roll out 1/2 of the pastry & place in a baking dish (like a brownie tin or similar), add filling, then another layer of pastry.
Both freeze well too, so I quite often have a bit of a baking frenzy & fill the freezer in ready packed portions

anyone got any ideas about money saving pack lunches. Not overly keen on sandwiches, or reheated food, although i can use a microwave at work, Costing me a fortune keep popping to the coop
What's your aversion to reheated food? Leftovers are a money-saving cook's best friend

This thread is so inspiring and motiving too. I have started to bring sandwiches in as I was spending £80 a month on sandwiches that were boring and bland.
So far Ive started with Cous-Cous and some peppers, toms, mushrooms. Ive also had some of that Uncle Bens rice with some bread. Ive made sandwiches today, just peanut butter ones but I find them yummy.
I cycle too and from work and need a pretty high carb lunch / snacks but not too much. I always have breakfast when I get into work, I notice that when I do I always have a decent day with regards to not going hungry.
I have taken some of the great ideas on here and will put them into action this week, e.g celery sticks & carrot sticks - leave them at work, I dont know why I dont do this. Make muffins & flapjacks etc.

My lunch at work can be anything from last night's leftovers (normally curry or pasta bake) to sandwiches/rolls/wraps etc to soup to salad, depending on what there is and what I feel like. I normally prepare it the night before and leave it in the fridge overnight.
The one exception however is my Friday lunch, which normally comes from Boots and is a 'treat' to myself at the end of the week - I usually get the king prawn noodle salad, a Diet Coke and their own brand Discos or a Caramel bar.

Thanks, that sounds like a yummy new veggie lunch I would enjoy(I always struggle for quick stuff to put together for lunches, being veggie and not liking cheese!)

To vary my lunch box i include fruit, rip top tinned tuna or similar/eg mackerel, Fruesli type bars, get a real pineapple and chop it up into cubes and take some each day,maybe some foil wrapped cheese triangles or similar,Feudal Britain needs land reform. 70% of the land is "owned" by 1 % of the population and at least 50% is unregistered (inherited by landed gentry).
