    I think you can sub double for single by mixing it down with milk but not the other way as single lacks the fat of double

  • For all you bakers out there,a little question.

    Can single cream be replaced with double cream when cooking ? i often have double in and don`t want to buy single as rarely use it can i use double watered down with some milk so the thickness of single ? Thanks for reading

    I more often have single in and use that instead of double :)

    Don't know if this has been said before but you can thin double cream with whipped egg white if yoou want a 'solid' cream.
  • I've been asked to make an apricot streusel which calls for low fat curd cheese. I'm finding it difficult to come by - can I just use soft cheese or drained cottage cheese instead?

    It's for a birthday dinner so I don't want to risk a disaster by using something unsuitable but even the local deli's don't seem to have it.

    Would quark do? I've seen this in most of the major supermarkets and it's a low fat curd cheese, so I'm sure it'd be ok.
  • I make apricot streusel - its a German recipe, and its quark which I use, a lot of German cakes have quark in them. :)

  • I always thought that curd cheese was the same as cottage cheese - cottage cheese is the "curds and whey" that Little Miss Muffett was eating! So it should be OK if drained
  • Thanks guys - I've decided to use cottage cheese drained - the dessert is for tomorrow night but I'll try it tonight (as it should be ok to reheat) and if it doesn't work I'll buy Quark tomorrow.
    when I bought the cottage cheese at Mr T's this morning I did look for Quark as I reallt have no idea what it is and I was curious but the space was empty

    Any ideas what i could replace cornflour with in this recipe? My last box was growing things and I don't think i've replaced it since. Could i use plain flour? I have almost every kind of flour imaginable (probably a total exaggeration.....) :p
