Astra Issues After Installing Car Stereo

Nice, wires not rated high enough for the current = fire.
OH should have left the wires on the stereo and car's loom as they were and just bought an adapter. They are quite expensive at Halfords, but the way to get them cheap is.... Go to http://www.autoleads.co.uk/database.php and look at the list in the excel file to find your model of car. There will be a number, I believe the one for your car would be PC2-04-4 Then go to ebay and search for PC2-04-4, at the top right open the pull down menu and select "Price + P&P lowest first". The first one is your cheapest but if you don't like the look of the seller (poor feedback etc), you can go for the next most expensive. Cheapest currently is £1.98 delivered, much cheaper than Halfrauds, and all you need do is plug the one end into the stereo and the other to the car and slide it in. No mucking about with the wiring.
I wouldn't be surprised if some fuses had blown and are causing the issues you describe.0
