sounds like a plan, trolleys down the street, very funny to watch. So what kind of things do you have on your meal plan? I need some inspiration today.

So far I have, in no particular order:

    Moroccan Tagine with couscous
    Homemade pizza
Chick pea curry ('cos it was so yummy!)
    Carrot and pumpkin risotto
    Mexicana salad with falafel wraps

I'm wondering whether I will like Roman gnocchi (not the same as the potato stuff. Might be too creamy for me.) and if I'm brave enough to attempt beetroot hummus!

And the list is getting long enough to necessitate the car! Unless I check whether the supermarket in question will deliver...

I also have a pot of soup which I made yesterday. I think it might be sensible for me always to have soup as a back up, becasue if I can't be bothered cooking, I will at least then eat something!

YUM they all sound divine. Particularly the beetroot hummas (my two favourite ingredients) I too am now off to the supermarket PAH I hate food shopping.

Me too! Though on the plus side I spent less than anticipated! (However I also popped in to a rather well known high street pharmacy and bought a little more then anticipated! All three for two! And all things I will use).

Inevitably I cannot be bother to cook now! Thankfully I have the soup. With some reduced price bread. And reduced price raspberry donuts which just jumped off the shelf and threw themselves into my trolley! :D

Plan for after dinner is to make the dough for pizza and attempt the hummus. I have plenty veg for veggie hummas dip for lunch tomorrow.

I also nipped back into the book shop and picked up a book on Mindfulness. I've had my eye on it for a wee while and it has another CD of meditations! I also bought a couple of magazines (Veggie Living and Yoga journal. :)) My friend would be cracking up at me. She wouldn't see those as magazines! :D Her idea of a magazine is one of those "celebrity" magazines. I don't know who on earth any-one is so I leave them for when the hairdresser hands me them! Or those horrific "true story" magazines. There's always a pile of them at my second job. I can't bring myself to read them. They are so depressing! Though do bring things back into perspective I guess.

I have cancelled my Sew magazine subscription so I don't feel so bad! Perhaps I need to set up a different subscription rather than pop in to the shop and be seduced by all the pretty magazines...

Yes my lodger bought some of those 'chat' magazines. Stories like 'My girlfriend and her witch mates tried to kill me' and 'Did my ex-husband deliberately kill our twins'. Upbeat themes you see. Left those and the industrial strength industrial sized cider in full view of visitors.

I thought I don't mind if people think I am an alcoholic from the number of empty Shiraz bottles lying around but I do have my standards!!! (And who's going to believe a bloke has bought the magazines? - they seem to have somehow made their way to the recycling bag!)

:rotfl: I was reading this thinking "I was sure Butti's lodger was a bloke. Must've got it wrong." Apparently not; just a weird bloke ;). He'd get on well with my lodger. :rotfl:

Pizza dough hopefully rising as we speak... hummus made. It's a wee bit runny and I was perhaps a bit heavy handed on the cumin as that's mostly what I taste, but we'll see how it tastes after being chilled overnight. It also makes a ton! And that was halving the amounts. Still, it tastes mostly like hummus so not too bad for a first attempt! :D Now just to refine the quantities until I get it how I like it. (I used sour cream too as I'd forgotten to get yoghurt.)

I think all that shopping and cooking calls for another of those donuts! :D

Any chance of that recipe? Oh and if there are any left could you chuck a donut. I will supply the tea if you like.

No problems Cheri. Cheers for the cuppa... Watch out for the raspberry jam dribbling down you chin...

    Beetroot hummus

    500g beetroot
    4 tablespoons olive oil
    1 large onion
    1 tablespoon ground cumin
400g tin chickpeas, draines and rinsed
    1 tablespoon tahinin
    90g plain yoghurt
    3 garlic cloves crushed
    3 tablespoons lemon juice
    125ml veg. stock

    1. Scrub the beetroot, bring pan of water to boil and cook beetroot for 35-40mins. Drain and cool slighlt before peeling. (Or cheat, as I did, and buy the ready cooked stuff from the supermarket.)
    2. Heat tablespoon of oil and fry the onion for 2-3 minutes. Add cumin and cook for a further minute.
    3. Chop the beetroot and place in food processor (or blend) with onion mixture, chickpeas, tahini, yogurt, garlic, lemon juice and stock and process until smooth.
    4. With the motor running, add the remaining oil in a thin steady stream. Process until the mixture is thoroughly combined. (Just noticed Iforgot this bit!)

The amounts given say it serves 8. I halved it but still think it'd be more than I'd manage to get through in a 2-3 days so next time I'll quarter it. But as I have a tendency to use recipes as basic guidelines only, it's not really surprising it was a bit more runny than it maybe should be.

Fab, thanks for that. I too only use a recipe as a starting point but I had no idea of beetroot hummus. Really like the sound of it. I have never added yoghurt to my hummus though.
