    Hi there,
    Well I don't tend to write recipes down but it goes something like this:
    handful washed red lentils
    1 small onion, finely chopped
    1 or 2 carrots, peeled and chopped
    1/2- 1 tin of chopped toms (or 1/2 carton passata)
    1/2- 1 red pepper (or orange ;)) chopped into about 1 inch sq pieces.
    1 stock cube (ham or veg).

    Gently sweat onions in a drop of oil for about 5 mins, lid on pan.
    Add washed lentils and water to this and start to boil (pot about half full), then turn down to a good simmer after about 5 mins (watch it does not boil over!)
    After about five mins add the stock cube, chopped carrots and peppers.
    After another five- ten mins add the tomatoes....the volume will have reduced water wise, but so add a little more if needed.
    Cook for about 30-45 mins, on simmer.
    Puree when finished, adding more water if you need to!
    Serve with crusty bread and a drizzle of cream.

    You can use leek at step one if you prefer, and I have also added sweet potato in the past.

    Im a bit new to meal planning - first attempt here

    Sunday- brekkie - teacakes
    lunch -Homemade veg soup with homemade foccacia
    dinner - veg saved from soup with chicken for meat eaaters and veggie sausage for me with roast pots

    Monday - chicken or veg curry

    Tuesday - Dinner - sausage and mash

    wednesday - cheese and potato pie

    Thursday - dinner - salmon, spinach and cubed potatoes, left over morrocan veg tagine for me instead of the salmon from the freezer

    Friday - dinner - red pepper lasagne and salad

    Mine will be something like this. Days might swap around a bit. Its mostly using stuff up from the freezer.

    Sun - bolognese pasta bake
    Mon - pork in gravy (leftovers in freezer) with steamed veg and smash (can't be bothered with proper mash after a 12 hour shift!)
    Tues - Mushroom burger in a HM roll with salad
    Wed - HM Fish pie and veg
    Thurs - Chicken kiev and salad
    Fri - OH taking me out :-)
    Sat - HM turkey curry & rice
    Sun - Tacos
    Mon - tea at OH's parents.

    This is purple sprouting broccoli from my garden. (Sown late as is common with my gardening efforts so at the moment it only has leaves on and no sprouts as yet.) As for the veg that's more commonly sold as broccoli (which I know as calabrese) - like a darkgreen cauliflower - I guess you can cook the more tender leaves. In fact I always do put them in with the florets but I find there's not usually much in the way of leaves on them.

    Hi SunnyGirl, yes it is ratatouille!
    Just put the cubed fish (anything but a bit of smoked fish is good, even if it is a pack of smart price smoked salmon) in with the ratatouille (usually made beforehand so the veggies are half cooked) and put a pastry top on. By the time the pastry is cooked so is the fish!

    Was hoping to have the leftovers today as we had visitors last night to share, but they ate it all! Still will find something!!

  • Just realised I didn't post this earlier. I like to put it on as it makes me feel in control!
    Sat out - took sarnies/fruit for lunch, had tea at the pub 2 4 1!!
    Sun lunch soup; eve guinea fowl, carrots, cabbage, fennel, roast spuds NO PUD!:(
    Mon - rissotto type thing with left over bits of guinea fowl, mushrooms,a carrot & a stick of celery - used the jelly left over from roasting the bird
    Tue - slow cooker - chilli bean/quorn casserole and rice
    Wed - Them - gammon steaks and veg as Sunday; me quorn fillet
    Thurs - Soup made using stock from gf carcass, hm bread

    Haven't tried anything new this week - getting a bit samey, so will try harder next week.
    Weight loss - here we go again - watch this space!
