    Today i made a Mincemeat Loaf Cake to use up the last of my homemade mincemeat but i am not impressed its quite dry, its a Mary Berry recipe (should have found a Nigella recipe) :)
    Do you have any rum or brandy?
    If so then put a few skewer holes in and pour a little on the top. The moisture will then run through the holes and you will have a lovely loaf cake:)

    Or just cover it in lashings of custard :D

    Or if like me you don't have alcohol try strong warm tea, 1/2 a cup of water and two Earl Grey bags gives a lovely flavour but any will do. And in true OS style you can dilute with more boiling water and drink any left over tea.

    Have got the daily bread and some dog biscuits baking at the mo, the kitchen smells so good :)

    Thankyou for all your suggestions, i have done Mary Berry an injustice, i cut the loaf up last night and put in cake tin, and today it has been lovely and moist :rotfl:

    Today I baked; apple and cinnamon cupcakes with vanilla buttercream with Twinkies on top; chocolate cupcakes with shaved vanilla white chocolate.

    choc fudge cake and a spicy cinnamon and sultana loaf in bm .............smells lovely
