Yesterday we had rhubarb crumble for pudding - my DH who previously hated rhubarb, specifically requested it!
Today I've got dough rising for two wholemeal loaves, two white loaves, bagels, and the tortilla dough is resting.
Later I've got to make some choc chip fairy cakes, and perhaps flapjacks. I'll see how I feel.0 -

I don't bake a lot, though I do enjoy it when I have both the time and energy.
Today I managed to get home a bit early, so I made a one-third size batch of plain buttermilk beskuit - South African Rusks. I made a full size batch (1.5kg of flour, approx 3lbs!) last week because I was having cravings for a childhood comfort food, and while they are tasty, they came out a bit dense. I tried making the dough a bit wetter today as I re-read the recipe and it said that the dough should be medium-soft, but mine was medium-firm on my first attempt. The texture of the latest batch looks ok, but I am waiting for them to dry out in the oven so I can taste them!
For those who have never tried them, they are nothing like the rusks made here which are fairly soft things for babies to suck on. Beskuit comes from the same family as biscotti - a twice baked cake/bread type mixture which is ideal for dipping in hot drinks. The main difference is that biscotti has a more cake-y base and often has fruit or nuts in it, while beskuit is closer to bread. They make a easy, quick breakfast and a yummy any time snack! They are sliced or broken into bars after the first bake, which tastes like something inbetween scones and bread and is not particulary nice to eat as is, then dried in a very low oven for ages. They go quite hard and crunchy, so the etiquette is to dip it once or twice in tea or coffee before eating it.

I love rusks! My favourites were the marmalade ones. I think it might have been Ouma who made them, but they stopped making them years ago for some reason. Muesli ones are nice too. I've been meaning to try and make some for years but haven't got round to it yet - I need a vegan recipe though.0

A key lime pie using the Delia Online recipe: tastes great. The only alteration I made was the exclusion of Grape-Nuts breakfast cereal, can't see any of it in my local Sainsbury's shop.
While the pie tastes quite delicious without the grape-nuts Delia says the add that extra crunch so any suggestions for an alternative.
To be honest I don't think I'd buy a packet of cereal just to make one or two pies.

I've always left the grape nuts out of her recipe as well. I also tend to use the Aldi version of hob nobs and its lovely. Its a nice recipe:)0 -
Haven't started baking yet as I've given the kitchen a thorough going over (I know. I did it in the wrong order!) but aiming to get cheese scones, banana bread, twink's hobnobs and pineapple upside down cake made today.0
