Vinegar cake-I found the recipe here on the OS board and was intrigued.I'll see if I can find a link. It's a lovely, simple fruit cake, which uses vinegar instead of eggs-the vinegar combines with the bicarb in the baking powder to act as a raising agent.I've made it twice,it's lovely!

    What's barm cake please?

I've made Nigel Slater's black banana cake, leaving out the nuts. I also use basic own brand plain choc chopped up instead of the choc drops. The recipe is on the bbc food website. It is lush, took some away with us camping with friends last weekend and were lucky to get a slice after all the kids had been at it!!

Love the story behind the strawberry crumbles!

Thank you for finding the recipe for me. I often substitute a spoonful of vinegar for an egg in cakes if there are more than 2 eggs because I begrudge using too many eggs :D

That's interesting.Would you just substitute one egg or more, say if a recipe used 4-5 eggs?I must try it out.;)

We had some excess eggs so I baked a Victoria sponge this afternoon and had it with a nice cup of tea (brewed in the teapot). It tasted so good and I put it on my late mums glass cake stand which made it look even more fab.
