    Right am feeling positive today so am going for another AF day - out for lunch today with family which will be nice (their treat!!)

    Other than that - going to make scrapbooks and pancakes with the kids - but probably not at the same time..............

    Can you tell me how you made it?

    I blatently cheated, was intending on making own pastry but ran out of time due to playing solitaire *rolleyes* so picked up pastry in Mr T's, they had an offer, 2 for 2 quid so couldn't decide if I wanted shortcrust or puff pastry, so bought one of each :D shortcrust for bottom and puff for top.

    Before going to Mr T's I did google some pie recipes and this is 'kinda' my take on a bechamel sauce...

    This is basically what I did, though I have no measuring implements (sp?) so total guess work :cool: (thank god it worked!). Chucked about 50g butter in a pan and about 50g of flour (just tipped it out the packet, about 10% of a full 500g packet :o), stirred that for a couple of minutes, not too hot cos it'll burn. Then I chucked in 'about' 150ml of milk, 150ml of double cream and 150ml of stock, season well, stir for a bit then take off heat. I had loads of chicken that I'd stripped off from my left overs from night before, chucked all that in. Then quartered half a pack of chestnut mushrooms and chucked them in. While that was cooling I did the pastry (or rather, unwrapped it :D). Put shortcrust on bottom then, making sure chicken filling is cooled, put that in the pie then put the top bit of pastry on (the puffed variety :D). Brush (or in my case teaspoon...) some egg wash on pastry, make a hole in the middle to let steam escape. Then cook on gas mark 4 (no idea of electric temp, sorry) for about an hour or so in my case as it was a very large pie :drool:. Insides are cooked so it's just a matter of making sure the pastry will be cooked through. I'm going to branch out and make my own pastry next time :cool:

    nowt wrong with ready made pastry... a perfectly acceptable shortcut. Jamie says so :cool:
