Beef stew in mine today, although it's more vegetable stew than beef! Still very yummy :D

    Hi Everyone,

I'm still new to slow cooking

I wondering if anyone can help me? I have a very joint of beef in the freezer that I would like to roast in my SC.

I love beef falling apart when it's in a stew or casserole, but how do I cook it in the SC to ensure that I can still slice it like roast beef without it shredding or coming apart in chunks?

    Thanks in advance ;)

Joints of meat have always stayed whole when I've done in my SC, and never come apart like chicken, and meat portions. I now dislike doing them in the oven because they always come out perfect in the SC. Just try it and see, on low setting.

Thank you Sublime, I've been afraid to defrost the beef until I had an idea what to do with it as I don't want to ruin it :T:T

The beef stew I made the other day turned out brilliantly. Even my fussy children ate it. *swoons*

I'm cooking a whole chicken in it today. Turned it on at 8.30 this morning so how long do you reckon it will take please? (Cooking on low).

Also I have noticed that the chicken doesn't smell delicious. It doesn't smell 'off', just no lovely aroma.
I put half a lemon in the cavity, squeezed half a lemon on top added a little chicken stock to the bottom along with two chopped cloves of garlic. Oh and stood the chicken on two large whole carrots.
Does that sound right? And will the chicken still taste yummy even though it doesn't smell too great? Thanks :)
I did a chicken with 3 slices of lemon. It too tasted a little strange. it was the lemon, it has infused(sp?) didn't taste like normal raost chicken. not too bad but an aquired taste....

    ps

tonight chilli - can't wait for tomorrow hopefully better than the last one...

Let me know if it turns out ok. Yours sounds a bit more complicated than mine. Mines just a cookworks 6.5 litre with a standard ceramic crockpot.

    What model is yours?

I cooked a kind of chicken curry yesterday, which had an unusual twist, but ended up tasting great.
A while back I bought four cans of Branston baked beans for a quid (don't usually eat baked beans, but they were cheap), so here is what I did.
Five chicken thighs, browned off with the normal chopped onions garlic, salt and pepper, in a spice mix which had half teaspoon chilli powder (trying not to kill my missus for once), two teaspoons Tandoori masala powder, two teaspoons garam masala powder, 1 teaspoon turmeric powder.
Once browned, I transferred the chicken to a large pot, and added a tin of chopped tomatoes. In the pan, I gently fried diced carrots, chopped leeks and shallots, and added them to the pot.
Then the stroke of genius - I added a tin of baked beans, and the juice of one lemon.
I did the usual simmer for fifteen minutes to allow the SC to warm up, then cooked it on high for four hours.
The smell was amazing, really warm, slightly sweet/sour. The consistency was a bit like a Dansak, which was probably down to the beans (I would use yellow lentils for a Dansak).
The taste was out of this World - my missus said it was one of the best - high praise indeed.

Still got some left over for today, and the best bit is the cost - about £3 for four decent portions.

My SC is probably my best new toy.Chilli con carne today - mostly grated carrots and potatoes, with pureed kidney beans. kids wanted to attack it before it was done, as they had smelled it!
Kraftkat - I brown/seal my joint of beef in the frying pan before I slow cook it. Add the seasoning and veggies, and forget about it. I did it for christmas, and it was sooo lovely, it also was the best gravy i ever made!
    Loving the sunny days!

my chilli didn't work out quite ight, bit enough bite. I think i need to experiment with the chilli powder and cumin a bit more..
  • I got a slow cooker for Xmas from MIL. Its a large 6 litre one by Tricity, the instruction manual was pretty basic though, no recipes with it. So far I have only used it once for a whole chicken, my DH did it all while I was at work but the only thing was there was too much liquid. Amazingly my toddler scoffed three portions of the chicken and said it was lovely - thats from the boy who usually turns his nose up at anything that isn't a chicken nugget!

Any good sites for recipes?? Quite fancy making either a beef stew (got stewing steak in the freezer) or buying some chicken thighs. I have carrots and potatoes to use up and have plenty of frozen veg in the freezer too.

My DH hasn't got much work on at the moment and if I get him trained in slow cooking then I'll have some yummy grub to come home to instead of me making it once I finish work...lol
