Crystallised Ginger- what to use it for?

    I also have a bag from when I made some marrow and ginger jam... so you could try that if you have some marrows knocking about.

  • I LOVE crystallised ginger and I often eat a piece just like a sweetie with a expresso coffee.

    Marrow and ginger jam?

    I have an apple and sultana chutney recipe:

    -3.25kg cooking apples,peeled and cored

    -25g garlic,peeled and finely chopped

    -1.15 litres vinegar

    -1.4kg sugar

    -225g crystallised ginger,chopped

    -450g sultanas

    -1tsp ground mixed spice

    -1tsp cayenne pepper

    -1tsp salt

    Slice the apples and place them in a saucepan with the garlic and a little of the vinegar.Simmer the apples until they are reduced to a thick pulp.

    Add the sugar,chopped ginger,sultanas,spices and salt,then continue to cook the chutney for 20 minutes,stirring occasionally.Stir in the remaining vinegar and cook the chutney until it reaches the required consistency.

    Makes about 4.5kgs.

    You could add some to the recipe if you're making a fruit cake.

    Dan Lepard in The Guardian has a nice Ginger Beer scone recipe which also uses crystallised ginger.

    I made a lovely apple and banana chutney from a very old Good Housekeeping book which had crystallised ginger in it and it's bloomin' lovely (and a great use of bananas if you don't like banana bread ;) ). I shall see if I can find the recipe for you if you like :)

  • Ooooh, make a ginger cake! That'll keep you warm in this cooler weather. Or you could try making chocolate chip and ginger cookies. There would be plenty of takers in my house for those goodies. :D

    Apple and Banana Chutney:

    1lb green cooking apples
    0.5lb onions
    0.5lb raisins (stoned)
    0.25lb crystallised ginger
    2 bananas
    0.25pint water
    0.75lb brown sugar
    1lvl tsp ground allspice
    1oz salt
    0.5tsp cayenne
    1 pint vinegar

    Core the unpeeled apples (another reason why I love this recipe!!), then chop them with the onions, raisins and ginger. Slice the bananas and cook them with the apples etc in the water in a covered pan until tender.Add the sugar, spice, seasonings and vinegar and simmer slowly in an open pan until of a thick consistency. Bottle while hot into warm jars and cover at once.

    The bananas seem to just dissolve into the sauce and make the most delicious taste and texture - and I'm not even keen on chutney!

    I've loaned the book to someone so the above is the recipe I have saved on my PC. :)

  • I chop it up and add the pieces to my choc chip cookies (recipe from another thread here). DH loves them, and much cheaper than the M&S dark chocolate gingers that he would want instead. :money:
  • I love ginger - I'm about to use some in marrow and ginger jam :)

    Little ginger biscuits - I made these last week when I found a bag dated last year sometime. Really quick and easy but they do need a processor. Makes 30-40 depending on size, but the balls want to be small cherry tomato-sized.

    150g plain flour
    25g cornflour (rice flour if you have it)
    125g butter, in cubes (marg is fine)
    50g soft light brown sugar (but any kind is ok)
    75g crystallised ginger
    Dark chocolate, optional

    Heat oven to 160c
    Put all ingredients except chocolate into food processor & blitz to combine. Make into small balls, put onto baking sheet and flatten with a wet fork. Bake 12-15mins. That's it:)

    If you have any you can melt dark chocolate and brush on once cooked.
    I've also done these with half ginger & half walnuts, which was yummy too.
