Crystallised Ginger- what to use it for?

I have found quite a large packet of this in my cupbord that needs using up NOW :eek: any recipe ideas anyone? and could I freeze some to use later?

personally I would probably just eat it - I love it. But you can use it cookies or cakes. In a ginger cake perhaps, or in any cookie type recipe instead of say, choc chips.

Waitrose do a gorgeous ice cream that's vanilla with chunks of stem ginger and dark chocolate ... maybe you could make your own with some good ice cream?

It's lovely if you put some in flapjacks when making - don't have a precise recipe I'm afraid - I just add til it tastes nice (and if feeling a bit extravagant put in little chunks of dark chocolate too!)

I picked up two boxes of crystallised ginger today in Waitrose. They were reduced from £2.50 each to 20p each. Apart from eating it as is can I chop it up to use in fruit cakes.

oooh lucky you -i love crystalised ginger. I chop it up and add it to marmalade cake. It's fab. Just make a basic sponge mix, 2 eggs and the the same weight in flour, butter and sugar.Add three tbsp of marmalade and ginger depending on how strong you like it. Bake in a loaf tin at 180C.

For xmas I made this and added a splash of whisky to the icing but its just as nice with orange juice - use more ginger to decorate. HTH

Afternoon guys & gals

I have just found 2 bags in the back of my cupboard of crystallised ginger!?! I wondered if anyone has any ideas what i can use it for I think my husband wanted some one day, bought 2 bags, had a handful and went off the idea!
