Crystallised Ginger- what to use it for?

My OH recently made a crystallised ginger and apple chutney. I think he found a recipe on the internet. It's nice but too sweet for my liking. I think you'd need a food process or some kind of stick blender to break it up though as it's pretty hard stuff.0

Well,the apple and banana chutney is done.Following the quantities given I've got 4 medium and 1 small jar.It's very spicy,but I know that this'll mellow.Very nice.
I'm certainly going to make this again.

Little ginger biscuits - I made these last week when I found a bag dated last year sometime. Really quick and easy but they do need a processor. Makes 30-40 depending on size, but the balls want to be small cherry tomato-sized.
Thanks for this recipe. I made a half a batch last night using dark brown sugar since that's what I had on hand. Dipped them in some leftover dark chocolate I had stashed in my baking cupboard. They are exactly like the M&S biscuits I mentioned earlier, so I have a very happy DH today. :money:0 -

Chocolate Shapes- 8oz Margerine
- 8oz Sugar

- 3 tablespoons milk

Spread into a swiss roll tin & leave to cool. Cut into slices before totally cool.
You can also add other things to them. I sometimes jaz them up with chopped up crystalized ginger.
As I say, I sometimes add chopped crystalized ginger and it goes very well with the chocolate!0 -
Would biscuits made with this freeze ok? Or would it be better to freeze the dough? Either shortbread or twinks.

150g plain flour
25g cornflour (rice flour if you have it)
125g butter, in cubes (marg is fine)
50g soft light brown sugar (but any kind is ok)
75g crystallised ginger
Dark chocolate, optional
Heat oven to 160c
Put all ingredients except chocolate into food processor & blitz to combine. Make into small balls, put onto baking sheet and flatten with a wet fork. Bake 12-15mins. That's it:)
If you have any you can melt dark chocolate and brush on once cooked.
I've also done these with half ginger & half walnuts, which was yummy too.
