    Slice them, dip in beaten egg, then semolina or breadcrumbs. Fry in a little oil and serve with salsa?

    A quick and easy way is to fill / stuff them with garlic soft cheese and cook in the oven, delish

    Or simply:

    Wash them.....Stick them on a baking tray....Put a knob of butter on them, salt, pepper and either fresh garlic or garlic from a herb jar...Chuck in the oven with your meat for the last 15 mins or so...Done!

    Similar to some of the suggestions above, I had some the other day and I chopped out the stalks and blitzed those and a couple of other mushrooms with the stick blender, blitzed a slice of bread, a shallot (all I had) and a clove of garlic. Then cooked off some smart priced cooking bacon, and mixed that in with the blitzed mix, added a couple of big spoons of the cheap dried parmesan that comes in a tub, brushed the mushrooms with oil and whacked them in the oven with some foile over the top.....they were loverly and very cheap :D
