    Chop, fry and serve in a mix of garlic, sherry and cream, with rice.

    . . . Nigella's Portobello Mushroom "cheesesteak" Sandwich ? Very naughty, but very yummy and you can try your own toppings too.

    1/2 cup butter, softened
    2 tablespoons garlic, roughly chopped
    1/4 cup parsley, finely chopped
    4 portabello (flat) mushrooms, stems removed
    4 bread rounds (foccacia about same size as mushroom caps)
    shredded lettuce
    sliced onions

    Put your cleaned mushroom caps, bottom side facing up, in a small baking dish.

    In a bowl, mash the butter and mix in the garlic, parsley, and salt and pepper to taste.

    Put about 2 tbls. of butter mix on top of each mushroom.

    Bake mushrooms until tender (15-20 min.).

    Slice foccacia down the middle horizontally to create a bun.

    Dip the inside of each bun half in the oozing hot butter liquid in the mushroom baking dish to moisten.

    Put a mushroom in the middle and top with lettuce, sliced onion, and salt and pepper to taste.

    As you eat, the butter and mushroom juices will drip out of your sandwich, so be prepared.

    You could serve this with Salad and Chips.

    Take out the stalks, finely chop them and fry them in a little butter with finely chopped bacon, onion and sliced red pepper. Once that's done add a little flour to the mixture and then stir in some double cream until it's a smooth consistency. Add some grated cheese and stuff the mushrooms with the mixture. Pop them into the oven on an oiled baking tray and serve with salad and crusty bread.

    You could make a sort of mushroom lasagne type affair. Make a tomatoey sauce (you could use mince but you probably don't need it- just some tomatoes and a bit of other veg done in the blender) then layer big slices of mushroom with sauce then some slices of cheese(mozarella would be great, you could also use something like ricotta or mascarpone) then another layer of mushrooms. Finish off by sprinkling with cous cous and grated cheddar (easier than breadcrumbs) et voila!

    I always have them smothered in cheese and ketcup in a burger bun with wedges and coleslaw. make delicious veggie burgers:beer:
