  • bit late now but i saw something on telly a couple of weeks ago which was a veggie suet pudding made with layers of flat mushrooms. looked well yummy, have been meaning to try it but those big mushys are a bit expensive

    Make up a mixture of breadcrumbs, parmesan and garlic. Use to stuff mushrooms and sprinkle a little extra parmesan on top. Bake in moderate oven and serve with crusty bread.

    Nothing too exciting, but very nice though. I won (from Take-a Break) a while ago an Italian food hamper, with about 20 sauces in. I'd forgotten all about it, used a sauce and did Mushroom pasta, and mushroom burgers with what I had left of the mushes. Really nice and I feel smug for not throwing them out :)

    I saw that too - it was on Gary Rhodes and looked really yummy - he made standard suet pastry (using vegetarian suet) and then lined a pudding basin. He took the middles out of the mushrooms and chopped them and fried them with finely chopped onions in butter for AGES with a little bit of brown sugar, salt and pepper, and he also fried the big mushrooms for a little time very gently to get the water out of them. Then he layered the mushrooms and onion mixture up inside the bowl and put a pastry lid on and steamed it for two hours. It looked wonderful - he made this sort of frothy buttery gravy to go with but I can't remember how he did that! i think that the receipe is on the uktv food website www.uktvfood.co.uk

    I have tried this and its really nice. I plan to do it with adding some smoked chopped bacon as well

    Mmmm, love the idea of the mushroom burgers, my sister is veggie and sounds like a good option for BBQ's too.

    Just bought 4 massive mushrooms for 89p out of Lidl - bargain!

    Now normally I would just lob them in t'oven with butter and garlic but I fancy trying something different - anyone got any favourite ways of using flat mushrooms?


    Got to say my stummy is rumbling even thinking about my dinner, I LOVE them :p

  • stuff them! make a filling using the stalks, some breadcrumbs , bacon, cheese herbs and anything else you fancy and bake dfor 10-15 mins

    or use them for veggie burgers, topped with cheese in a bun
