Hope you've had a good day! I started our challenge by taking into work a jacket spud & some tuna mayo I made up last night. I was going to make a salad to go with it but hadn't been quite organised enough to get that ready! We don't have a microwave in work so all my meals will either have to be cupasoup type (we have hot water) or sandwich based. Mind you...cold risotto is lovely!

I have plain cous cous at home, whats a good way of making it interesting? Just veg and a bit of chicken i guesS?
roasted veg stirred though, maybe add herbs/spices to the cous cous. sundried tomatoes would add flavour and colour.

Day 1 gone well for me, sandwich, crisps and banana (not very original but was in the car all day!!) Even resisted when one of the offices I was in this morning had a sandwich man and the soup looked and smelled yummy.
Got to have my 'bought' lunch tomorrow cos away tonight and also wed... However, lunch on wed is bought for me cos on a away dayu, so not really cheating????

Woo! :j Day 1 done! Took a frozen ham buttie, which had defrosted by lunchtime and didn't taste any different for having been frozen. It was SO easy just getting it out of the freezer this morning!
I also went for a two mile walk at lunchtime in the snow to post a letter :j. I was surprised how much less tired than normal I felt during the afternoon for having had a proper break and some fresh air.
Meant to mention in case it's useful for anyone, I got 3 x pasta in a mug/mugshot meals for £1 from Pound World that you just add hot water to, as well as 4 x small freezer containers for individual portions of 'leftovers' lunches! :T:dance:£2 savers challenge:dance:£152/£200:naughty:Still trying to pay off my CC£3,800/£4,343 paid off0
