Oneeyed, No problem with you posting a recipe - just don't copy it word-for-word when describing the method. For example 'Chop the whole tomatoes into a rough dice of a similar size.' could be phrased 'Chop the tomatoes into fairly small pieces of about the same size.'. I have marmalade to use up, which I don't really like, so would love to see the recipe. Does the cake taste very much of marmalade or just of spiced oranges?0

Tonight I made the ginger &pork noodle stir fry from economy gastronomy using leftover roast pork. It was amazing.... Pork stayed really moist, the ginger and chilli gave it a great flavour, and I used cabbage, dried shitake mush, tinned bamboo shoots and shallots instead of brocolli, mushrooms, scallions and mange tout (lol i did follow the recipe honest
)
Would highly recommend to anyone with leftover pork (although the lasagne is better, the stir fry prob healthier :rotfl::)0 -

Thanks. The recipe makes a lovely orangey cake, not too marmalady at all. I've never been that good at baking but this one has turned out brilliant.
125g butter
200g golden syrup
100g caster sugar
2 tablespoons marmalade
2 tablespoons candied peel which is optional, I didn't use this in mine
250g self raising flour
2 teaspoons ground mixed spice and 1 teaspoon ground ginger
1/2 teaspoon bicarbonate of soda
150ml milk
2 eggs, beaten
1.Melt the butter, golden syrup, sugar and marmalade in a pan over a low heat. Remove and stir in the peel if using.
2. Add the dry ingredients, milk and eggs and mix until smooth.
3. Pour into a 20cm deep square tin(I actually used a smaller round one as I don't have a big variety of tins). Bake for 35-40mins at 180C
The topping suggested: Slice 2 oranges finely and simmer covered for 25 minutes in a pan with 50g caster sugar and 200ml water. Remove the lid and cook for a further 5 minutes until you have about 2 tablespoons of liquid. Add 2 tablespoons marmalade and stir until melted. Spoon over the cake when the cake has cooled.
The orange topping tastes lovely with it and adds a real tang but I think the cake would taste lovely without it. It apparently doesn't keep very well, for only 3-4 days. Mine is still absolutely fine from Sunday.December GC £23.43/120 :T

OK I made this last night it sounds gross but it really was good.
Carrot and cardamom pudding.
1 pound carrots grated,
Spoonful sultanas
10oz orange juice
1oz brown sugar
1/4 teaspoon cardamom
1 desertspoon marg
8oz milk
cornflour
flaked almonds.
put the carrots, sultanas, orange juice, sugar, and cardamom in a pan and bring to the boil. Cover and simmer for about half an hour, dissolve the cornflour in the milk, and add to the pan. Bring back to the boil stirring all the time till it thickens. but into seving dishes and put in the fridge for a few hours, then sprinkle the almonds.

Carrot and cardamom pudding sounds yum.
I got a new Weightwatchers recipe book all about baking - this one - so I'm trying out a banana muffin recipe right now. They're in the oven as I type.
Trouble is I couldn't find any big muffin cases so I had to just use normal size fairy cake cases and I've divided it out into smaller portions but I still think they're going to rise up too much and spill all over the place. And I also used SR instead of plain flour (because I had no plain flour left, for the first time ever I think) so I imagine I'll have to clean the oven... still as long as they're tasty. I'll try and post a photo when they're done.0 -
Haven't read all the posts, but I'd like to join this challenge please. We love trying new things and there are some lovely cookbooks on the shelf. We're veggie, and I love Denis Cotter's books, but this week have decided to go for an Ottolenghi recipe: "pizza" with feta, tomato & olives (it's brioche topped with oven dried tomatoes, caramelized onions, kalamata olives & feta).0

I hope this doesn't come out too massive... these are my Weightwatchers banana muffins. A couple of them are a bit toasty on top but they are yummy!0 -
Today my OH and I made lamb bhuna from Madhur Jaffreys Ultimate curry bible ( I say we, it was his idea, I did all the prep and all the cooking once the ginger fryingmade his eyes water
) unfortunately I had forgotten I HATE fenugreek seeds
so he will have some of that and I will be veggie tonight-with roasted spiced cauliflower and sweet potatoes (adapted from Kitchen Diaries-just uses potatoes) and this new recipe which will be made without the spinach, cashews (cos we don't have any) and the raisins (cos I don't really like them in savoury food)
So it has ended up being a bit healthier for me, and messing up my menu plan more than ever lol0 -
Made this last night, but did it in my slow cooker. I was a bit worried it would overcook as I was stuck in traffic (took me 3 and half hours to get home, usually takes about 40 minutes
) but it was fine.
Nice, but for some silly reason I didn't expect the chorizo to be so smokey, I think I was expecting more of a salami taste! No photos as didn't eat until so late, but will be making the rest into a pie tomorrow, so may try and get a photo of that.Grocery challenge - Nov: £52/£100

Hiya can I join in please? Haven't read all the posts yet but sounds like fun. I too have lots of cookery books and files of recipes and am addicted to cookery programmes but do tend to cook same stuff all the time so looking forward to using some of the books especially.
I love Greek, Italian, Chinese and Indian food especially but my OH isn't so keen, just likes meat & tatties basically but I am managing to get him to try new stuff now and again
Will have a browse through my books and like Nelski think I will work my way through one at a time, see how it goes.
I am also in The Grocery Challenge and 2010 Frugal Challenge so will be trying out new recipes but using mostly ingredients I would buy or already have -iyswim.
Away to read through all your posts for inspiration!0
