I have quite a lot of food in the freezer, but the store cupboard has been run down a bit after two weeks of difficult shopping ... the car was stuck at the top of a hill ... had quite a few trips with a backpack, but tended to just get what was needed as I was on the bus. We've moved the car down to the main road expecting more snow today, and will manage a supermarket trip later. Will stock up on beans, tomatoes, etc etc. As always, meal plan is for main meals only and very approximate.
Saturday: roasted chicken breast with a thai spice rub, thai red cabbage & carrot salad left over from last night, roast sweet potato [veg sausages for kiddies]
Sunday: pasta bake using up some meatballs in tomato sauce from the freezer, with salad [plain pasta & cheese for DD]
Monday: beefburgers with spicy mayonnaise, hm oven chips, salad [veg burger for DD]
Tuesday: baked potatoes stuffed with leeks & cheese & gammon (leftover from xmas), tomato salad [no gammon for DD]
Wednesday: pork medallions with sauted apples, rice with peas & corn [omelette for DD]
Thursday: chilli with rice & corn chips [replace chilli with baked beans for children]
Friday: leftover chilli with roasted butternut pumpkin [veg sausages for children]Mortgage started on 22.5.09 : £129,600Overpayments to date: £3000June grocery challenge: 400/6000 -
Hi guys
Need to start meal planning properly as still have a lot of Christmas food to use up and we're moving house this month (first time buyers) so have a month's rent AND mortgage to pay out on 15th. Eek!
So. Here goes! I work Saturday to Friday.
Saturday: Potato, sprout, lentil etc curry - made yesterday with leftover Xmas veg and a tin of Tesco value curry sauce. Loads left from eating yesterday.
Sunday: [STRIKE]Some kind of roast to use up parsnips etc, not sure what we'll have as the "meat" bit yet though.[/STRIKE] Had veggie sausage casserole made with leftover Xmas veg and Cauldron sausages.
Monday: [STRIKE]Out at the cinema (preview tickets) so probably houmous and sugar snaps.[/STRIKE] Didn't go to the cinema because of the weather so I had leftover curry from Friday and OH had leftover sausage casserole
Tuesday: [STRIKE]Out at the ballet (free tickets through work) so a 2 for 1 somewhere.[/STRIKE] Again didn't go out so made chilli and jacket potatoes
Wednesday: [STRIKE]Possibly out at the cinema or staying in to watch Man U - if we stay in it'll be pasta.[/STRIKE] AGAIN didn't go out! Had leftover chilli with brown rice.
Thursday: Veg biryiani
Friday: Pasta if we didn't have it on Wednesday, otherwise some kind of soup or stew.
Also starting WW in advance of my wedding so everything will have to be low fat! Lunches will be soup/stew/couscous salad or leftovers for OH.

As I've just taken on the task of caring for my Mum following her stroke, one of my (many) resolutions for the New Year, is to be better at meal planning (something I never bothered to do when I was working). Here goes....

The rest of the week is more frugal....

Thu 7th Chicken Casserole, Mash, Green Beans, Cauliflower
Fri 8th Omelette with gammon pieces, mushrooms, tomatoes etc, New potatoes and green salad
