I think with chocolate brownies you need a good chocolatey hit, and drinking chocolate is a bit too sweet and not chocolatey enough......

    thats my own opinion though!

I guess you could reduce the sugar as drinking chocolate contains sugar.

It won't be as dark/rich but could work.

Do you have any plain chocolate? Melt some to enrich the mixture

Does anyone have an easy chocolate brownie recipe? Ideally one with self raising flour rather that plain flour and baking powder.
  • I don't have it to hand but if anyone wants a vegan/egg-free/dairy-free brownie recipe, i can dig it out later :)

I made these last week, they were excellent (and my brownies have always been disastrous in the past):

I've made Delia's for years, tho her more modern recipes probably use v expensive nuts etc and I use whatever I've got (except peanuts which make them DISGUSTING - I hate peanuts) Try her website ? (sorry can't do links.) And don't lose your nerve and let them cook too long, they should be squidgy.
Yum, just fancy one now !

I wanted to make the weetabix brownies last night but didn't have any eggs....so I found 2 different egg free brownie recipes in my cookbooks. The first one was an absolute diaster and came out like a flat, hard biscuit. The second recipe worked like a dream and was delish!

I used my breadmaker measuring cup....

2 cups of self raising flour
    2 cups of sugar
    3/4 cup of cocoa powder
    1 tsp baking powder
    1 tsp salt
    1 cup of water
    1 cup of veg oil

Combine all the dry ingredients in a large mixing bowl. Add oil and water and mix well. Pour into lined baking tin and cook for 25 mins at 175 degrees.

I'm using the leftovers in a choc and cherry trifle today

Thank you, thank you Noozan :T I'd given up making brownies because my dd is allergic to eggs (yawn, yawn -Thriftlady's allergic daughter again  :D )

Does it really, really work ? I ask because my previous attempts have been of the flat biscuit variety. Do they come out gooey and cakey at the same time ?

They came out "rich cakey" with a slightly crusty top.

They may have been gooey but I switched off the oven and forgot to take the tray out as I was busy doing something else, so they got extra cooking time in the residual heat.
