BTW, you can do nice pastry-less quiche or flan. good alternative if you can't eat wheat or gluten, or want to lose weight.
just put all the filling ingredients in a greased shallow dish, and then put the shallow dish in another one of water, then oven as before.
nice with some sliced boiled potatoes in to give it some body.0 -
I paint the pastry case with egg white before baking it blind, as this stops it becoming soggy when the wet filling goes in.Oh dear, here we go again.0

I always bake the pastry blind, prior to filling with whatever. Am a lazy so and so, and just !!!!! the base with a fork, and that seems to work just fine.
Recently been making bases with half oatmeal and half flour....has a real nice nutty flavour. Or another one is to melt butter and use oatmeal, press into flan dish....kind of cheesecake base mixture. Only thing is latter does use a lot of butter, so lots of cals for anyone watching them! :rolleyes:0 -

You don't need 5 eggs though, 2 eggs and half a pint of milk/cream or a mixture of milk +cream.
Use whatever you like for a filling - bacon and cheese, veg like mushroom, broccoli (cook first), asparagus, smoked fish is good, salmon, tuna, chicken....0 -

If your daughter is interested in baking why not get her a Bero recipe book, simple basic recipes for cakes pastry steamed puds etc and its only something like £1.49 at Morrisons (beside the flour) or cheaper from the Bero website.0 -
Thanks. OH likes quiche but I haven't got round to attempting it yet. Have just remembered frozen pastry, reduced mushrooms, and my Be-Ro recipe book at home. Will make him a mushroom quiche for lunches - keep him happy.

I love homemade quiche, particularly quiche lorraine, I make it with eggs and single cream. I think most people don't know how amazing HM quiche is as hardly anyone makes it any more, completely different to shop bought.
My OH always refers to it as flan though, he says real men don't eat quiche0 -
Oh, I'd love to try making this at home with the boys. Last time I made a quiche was is school, you know what I'll be doing tomorrow!
