  • Just wanted to say a great big THANK YOU to everyone who replied to my cries of help in making a quiche yesterday. Me and DD followed the Be-Ro recipe. We've just had it for dinner and it was delish.

    Going to make a quiche with egg and bacon filling.I used to make these but lost recipe.Eggs,milk,bacon,quantities?making it in a sandwich tin.

    There's a very simple recipe for quiche loraine on the Be-Ro website. I've done this one a few times and been very pleased with the results. One thing I'd say though, is depending on how salty your bacon and cheese are, you may not need to add the salt to the filling. I used cooking bacon and cheddar, and didn't bother with adding salt. Glad I didn't as it would have been to much if I had.

    I am looking at making a cheese and onion quiche as I have quite a few eggs from my chickens.
    Is there a recipe that you swear by that could be passed on.
    I made my mince pies from a recipe that someones elderly neighbour had given her and they were amazing so thanks for that.
    The pastry was lovely and crumbly and everone really loved them.

    I don't have a recipe, however, my staple ingredients are onions - fried off - and grated cheese, three eggs and enough milk.

    If I have it I like to put chopped fried bacon and onions in the pastry base. Sprinkle the grated cheese over the top. Add sliced tomatoes and pour over the eggs and milk beaten up.

    There are also other combos. Chopped, cooked chard or leeks, allowed to get cold and mixed with the cheese and eggs. I tend not to add milk because the vegetables are more moist that bacon and onions.

    I use a wholemeal pastry base, partly cooked in a coolish oven so it doesn't brown. Vegetable quiches take longer to cook that the bacon and onion. White pastry is fine, but I do the same and part cook it in a cool oven.

    Really anything can be used in the egg mix. They also freeze well. If I'm going to have the oven on I often make a quiche. I cut it into quarters and freeze. The last time I did this I only had onions, so a cheese and onion quiche it was. We've had the first two portions and very nice they were.
