Been busy today - I've made another bracelet! I've also made 20 or so, toppers for the cello bags rather than using the print out poem, like I did last year. I have made reindeer poop, snowballs, and magic reindeer food. Going to make some santa's kisses too. I had to order more cello bags as I can't find the first lot. Once they're filled, I'll take some photos. I can photograph the packets of chocolates that are completed as soon as I find the battery charger for the camera.

    Glad DS feeling better Legendmum.

    Glad DSi turned up Mum2one.

Not glad you're feeling yucky Mum2one and Jj.

    Hope everyone else is well.

Off to get tea now - be back later xxx

hia, in my lil post yday I said I would put on some really dead simple recipes for coconut ice and peppermint creams. although I said Id put them on yesterday, I thought it better late than never. Made the coconut ice today and turned out perfect. Haven't made the peppermint creams yet but since I bought the condensed milk, I may try that soon too.

    Coconut Ice
    100g condensed milk
    115g Icing sugar
    85g Desiccated Coconut
a drop or two of red food colouring.

    1. Line the inside of a small plastic box or loaf tin twice with cling film.
    2. In a bowl, sift the icing sugar into the condensed milk and mix.
    3. Add the coconut and mix well (the mixture will be very stiff).
    4. Separate the mixture in half. Keep one half white and add the food colouring to the other half.
    5. Press the white mixture into the box/tin, and then add the pink on top, pressing down firmly.
    6. Set in fridge for roughly 2-3 hours or until set. Chop into squares, Makes roughly 12 pieces.

Note: if you would like chocolate coconut ice, replace the red food colouring with about 25g of melted chocolate.

    Peppermint Creams
    55g condensed milk
115g Icing sugar (plus a little more for dusting)
A few drop of peppermint extract.
    25g plain chocolate (for decoration)

    1. Combine the condensed milk, sifted icing sugar and extract until it forms a soft dough.
    2. Lightly dust the surface and roll out the mixture untill about 5mm thick.
    3. Use a small cutter to create the pieces, keep re-rolling to get as many as possible.
    4. Melt the chocolate and use a spoon to lightly drizzel over the pieces, to create lines and patterns.
    5. leave to set at room temperature.

Both are so easy and require no cooking. Only a few basic ingredients are needed and I think they would make great gifts. Maybe wrap in cellophane and ribbon, or a little box.

    Hope this helps

    Hello all :j

junior - get well soon............at least you managed to get something done with your time off

mum2one - hate bugs like that.......hope you feel better soon

Well I overslept...........plumber due at 8.15am !! I woke at 1/4 to 9  Not sure whether he called or not...........expected him to pop back or phone all day but he didn't so I'll have to phone him tonight and grovel and apologise for not being up.........:o
Turned into one of those days where it feels like I've done nothing but when I think about it I've done a fair bit (I think !). Managed to sort out sons girlfriends birthday stuff and christmas stuff into respective boxes. Her christmas stuff doesn't warrant a shoe box but I found a smaller one I covered with christmas paper. So, they're all ready.
Checked through christmas cards and found I hadn't done one for sons girlfriend -or a birthday card !! And need to do teenage grandkids birthday cards. Still, least I got a load of stamps stuck on. OH always picks some stamps up when he gets the pension and they've built up so I had about 4 books full.
OH picked up post it notes (really wanted green as I'd managed to print off a nice green calendar for my kitchen organiser but he got yellow.....was all the shop had.............might have to take some green ones off a coaster and swap them around)
    So, thats been my day.........:)
I would be unstoppable if only I could get started !
