They sound delicious. Do you have a link to a recipe by any chance? I would like to have a go at making truffles, even if it won't be before Christmas.
I'm not really big on recipes BUT it went roughly like this:
450g dark choc
600 ml double cream (well, you can use single, but what's the point)
Melt choc in microwave and stir in cream. (Some people do the boil the cream and stir in choc method which I tried last night and still hate). Separate into different bowls depending on how many flavours you want (I did 4).
Add dry ingredients before wet ones, as liquid makes the chocolate sieze.
Apricot - however many dried apricots were left in the jar chopped into tiny pieces (use scissors, life's too short otherwise), stirred into the choc mixture, followed by a slosh of apricot brandy (or any other apricot-flavoured alcohol). You can do this with any dried fruit you can find alcohol to match - prunes & eau de vie die prune; pears & poire william; peaches and peach brandy ... or even better framboise liqueurfor a peach melba truffle! Your only limit is your imagination
Ginger - stem ginger in syrup - chop the ginger into little bits, add those and some of the syrup
Amaretto - add ground almonds and a glug of amaretto, coat in toasted flaked almonds
Cointreau - a slosh of cointreau (I also have triple sec which might be nice - grand marnier is also nice, or orange zest and juice if you want non-alcoholic ones.
You need to coat them all in different things to make them look different. I've used cocoa powder on the apricot, icing sugar on the cointreau and almonds on the amaretto. You could use melted chocolate, but I'm too lazy, so the ginger ones will have cocoa powder and gold dust food colouring (it's either that, blue glitter or pink sparkles!)
Rolling them is messy, so be prepared for it. Hex can advise as to how to make them tidily. I make rustic ones. You can also pipe them if you catch the mixture at the right consistency.
They freeze well too... best to keep them that way if you might be tempted.
Off to have fishcakes and frozen peas for supper! I have established that even if I am snowed in I won't starve. Hopefully the dried fruit will see off scurvy - I have 8 pigeon breasts, a large fish pie, individual veggie pies and a couple of packs of sausages in the freezer and masses of pulses in the cupboards. Lots of dried fruit, fruit juice, vegetable juice and rice milk. I think I'll manage...:D0 -

Best Christmas Present Ever has just been confirmed - WE ARE DEBT FREE!!!
Congrats.:j:T:j I so can't wait for the day I get to announce that one.
Thanks Rosepink, I'm feeling a bit better at home, but thats most likely coz I'm downing various meds (with appropriate precautions obviously) and they're taking care of my symptoms. They also take care of my judgement and sanity, on account of being drowsificating, which means I can't use them at work. B*gger! On the staff issue, we're always short and yet always overspent on wagesGod only knows with that one.
Well, managed two loads of laundry, got some tumble drying done so all my and t'other half's uniform is clean and dry 'til christmas (yes I realise that is only two days, coz we've both got days off). Also got pots done and tidyed the living room.
Hope everyone else is doing well. Now MARRIED!11/09/100 -

Will he manage to get home?
Hopefully they will either find a driver or put 'em on coaches. They are always playing silly b£ggers and either all phoning in sick at the same time or not turning up for some reason. They don't seem to realise that the people wanting to use the trains have often been out at work earning a living for 12 hours :rolleyes:The birds of sadness may fly overhead but don't let them nest in your hair0 -
I have just had a marathon drive home - trip of about 20 miles in total from my office to pick up DS from day camp to home. How long has it taken? Yep - 4.5 hours....I'm shatttered.
If you don't need to travel please don't!!
MoamAlthough no one can go back and make a brand new start, anyone can start from now and make a brand new ending.... life is a WIP.
Snowball says too far away, working hard to bring it forward.0
