Hi all
I just wanted to pass a lovely recipe that my DD's boyfriend cooked for us last night, it is called Veggie Irish Stew (and it does not contain lentils!).
It is basically a pack of soya mince, cooked with a large amount of carrots and potatoes in water and flavoured with vegetarian gravy granules. We ate it with buttered bread and had steamed kale dressed with fried onions on the side. Dirt cheap but delicious.
We saved a whole tub of it in the freezer and it is going to go into a pie or an all-in-ome soup when we have enough soup leftovers in the freezer (just emptied and defrosted it so not many leftovers there yet!).
When we defrosted the freezer (by accident, I must say - someone switched off the plug!) I salvaged all I could, threw away some of the stuff that had sat there since the beginning of the ice age, and then used up the leftovers in a sort of soup, it was an open bag of peas, open bag of artichokes, leftover rice and leftover spinach and potato curry. Banged them all in a pan and boiled it up. It was gorgeous!
Keep up the good (OS) work!
CaterinaFinally I'm an OAP and can travel free (in London at least!).0 -
I am going to be so happy when this month is over! Nearly fell at the last hurdle last night when realised I had hardly any pasta left so had to serve my gruel pie instead. Going to make a loaf now and I have 3/4 can of beans and some cheese so it's good old cheese and beans on toast for tea! Tomorrow I am going out first thing to buy myself some chocolate for breakfast! It's going to be the best bar of choc i have eaten!!!
