    Just to let you know, got up this morning after covering the fudge with greaseproof paper and leaving at room temperature overnight, and it seems to have firmed up quite a bit. Still not as firm as I would like it to be, but cutable now and keeps its form, so good for my sweetie boxes.

    FYI, this is the creamiest, smoothest, tastiest fudge I have ever tasted and the hubby was so shocked he even called it "perfect", which believe me, is no mean feat!

    can you freeze fudge ? I made some with condensed milk & marshmallows and want to freeze it ...?

    Apparently, yes you can. You have to wrap it in cling film and put it in an airtight container, but apparently it will last for months!

    Oooooh..... fudged fudge alert..... as you have probably read, my first attempt at fudge was good, but not great. The taste was there, and the consistency, but it just didn't want to set properly. Let me just explain, it was set, but not set enough, so not runny by any means.

    Anyway, I was thinking of ways to harden it up a little, so I decided to add a bar of smart price dark chocolate. I melted the chocolate in a dish above a pan, took my cold fudge off the tray, scraped it into a bowl, added the melted chocolate, mixed it first with a spoon, then had to get my hands in, because it was too stiff. Put it back in the tray, and hey presto it has set, plus I now have the added bonus of absolutely heavenly chocolate flavoured fudge, which tastes a lot like chocolate butter cream.... oh I am going to put sooooo much weight on over Christmas!!

    I only did this with around a third of the mixture, just to try it out.

    I will seperate the rest into two, one half having white chocolate added, the other will be used to make fudge truffles!!

    I made rocky road bars yesterday and they went down a storm using maltesers and mini marshmallows, i got the recipe from here, i had to hide half of it as it was being eaten so quickly!!:rotfl::rotfl:

    This is all in the name of science you know, well thats my excuse and i'm sticking to it! You see, my reason for making all of these delicious sweeties, is that they are a present for family and we are visiting this weekend, so I need to get it sorted :D

    This afternoon i'm going to attempt another truffles recipe, made with cream cheese!! I shall post the recipe when I have a little more time.
