  • Hello everyone! I bought some reduced pork mince so I'm making that into a pasta sauce with HG carrots and pumpkin. I dug the rest of the beetroot from the garden. I've cooked that and will freeze it (after having some warm with a cheese baguette for lunch :D ).

    Been really struggling to be OS the last few days - DD has a bad dose of tonsilitis, and doesn't appear to be responding quickly to the antibiotics. She's not eaten much since Friday (and what she has, she's not been able to keep down :o ). Her throat is so swollen that she's struggling to even drink anything. With DH abroad on business, and loads going on at work, it's not been a great week so far :o Sorry to go off topic :o

    I have shopping being delivered tonight, which I hope will be the last one before I stock up for Christmas :T

Definite re-think on what frozen stuff can be made part of the Christmas Stash is also in order!

    PP - get a bottle of glycerin and add a teasp to warm milk. Make her sip it and the glycerine coats the throat and eases it. The upset tummy is the antibiotics, sometimes I wonder if they are worth the hassle.

    Olliebeak - that sounds like enough to keep you going for a good while! Your freezer must be huge, I am v.envious! So many parsnips - parsnip soup dare I suggest? I almost feel afraid to suggest it....Don't worry it's only freezer organisation envy!

    We DID have a power cut about three weeks ago :( - but only lasted half an hour - phew!

    I've got a small chest freezer that I've had for about 15 years. Two years ago, I got a second hand fridge/freezer (4 drawers). Then my daughter decided to sell hers which was bigger than mine (bargain at £50) so I bought it off her, intending to sell the other one. Transferred everything over and got it cleaned out ready to sell. Payday came around, and I went a bit crazy on the frozen stuff/whoopsies :o. No space in the freezers so had to plug the original f/f back in again. Think I'll hang on to it now until into the New Year and then run it down again - with the intention (once again) of selling it - fingers crossed.

    I'm pretty certain that, with what we've got in the freezers, I could get through Christmas without buying any more meat. As fedupandskint says, I feel a batch of Spicy Parsnip soup coming on and maybe some Winter Veg :T.

    I was thinking of doing some baking in advance but maybe I'd better keep any freezer-space for bargains on bread in the next few weeks and bake on Christmas Eve so that things are fresh and can go into large airtight tins/containers.

    Just had a brainwave - I'm going to defrost all the sausages and do a huge sausage casserole in the SC. OH wasn't keen on the venison sausages when I bought them but, if they're cut up into thirds after browning, they won't be noticed as much :D - they'll soon absorb the other flavours in the sauce :j. Once it's cooled down, I'll portion it all up into containers and freeze them as individual meals, maybe some with mashed potato on the top (like a cottage pie).
  • Good idea Olliebeak, I made a lovely pasnip and orange soup and I don't really like parsnips that much, obviously in the freezer portioned up! Funny I was thinking of getting a chest freezer for the cellar to increase my storage space alongside my undercounter 4 drawer freezer but i'm having 2nd thought now cos' I'd just fill it up to the top constantly! It's only in the last 2 weeks that I've started emptying mine and using food up, some I've had all year. I love the idea of being more organsied and preparing food in portions, which I do sometimes but not that often.

  • I think I've finished my Storecupboard challenge. I've used up all the miscellaneous items -sauces, half opened packets, handfuls of frozen veg and fruit, freezer leftovers etc. The meat has gone and been replaced with more meat :D Yes, I have restocked. I've got enough now to last until next year and I'm buying some frozen fish tomorrow.

    I'm now concentrating on keeping my stores simple and thrifty and I'm not letting myself get distracted by cookery books that tell me I need to buy Pedro Ximenez sherry, pistachios, parma ham, cherry brandy, maple syrup, edible glitter and dried porcini - no thanks Nigella (has anyone else noticed just how many different kinds of alcoholic drinks that woman uses in her recipes ?).

    I have my Christmas stocks ready -hm mincemeat, pudding made, cake made (just a traditional fruit cake-nothing fancy, and I won't be icing it), turkey ordered. I shall make some batches of quick flaky pastry for the freezer and some florentines in Christmas week (from storecupboard ingredients). I don't think I need to buy anything else for Christmas except sausagemeat and chipolatas.

    Nearly there! I still have a fair bit to use but have some space now for the weekends shop (France on Friday and Costco at the weekend)

    Last night we had a storecupboard special "Tuna spaghetti" using up a tin of tuna, 1/2 pack of spaghetti, tin of condensed mushroom soup and some cheese, served with roasted veg we had plenty for 2 and enough for more today.

    Our last veg box delivery of the month comes today with some eggs:j so I can get some more baking done!
    Our days are happier when we give people a bit of our heart rather than a piece of our mind.
