It's always more awkward when you can't plan in advance.
My OH only gets his rota a day or two in advance of actually working (they've left it til Sunday at around 5pm to post it before - for that Monday!) & he can work any hours from 4:30am to 3:00am the next day (obviously not all 23 hours but couldnt think of a better way to word it!)
Might be worth asking them if they can let you know in advance if they'll be homeEven if it's just a quick text from them

I am guessing that you used up your storecupboard by now? How did it go? Looking at it soups and bean curries must have featured a bit! Also have fruit in the bowl...
I am hoping to join the grocery challenge this month as I have 'fallen' off the wagon recently but have a week without my 2 DS's and 1 DD as they are on holiday with their dad so just me and the dog! Thought I would kickstart with a storecupboard challenge and see how far £10 in my purse goes until they come back (next sunday).
So basically I have an array of bits and bobs with a fairly well stocked cupboard so have done a meal plan for the week just for me......
breakfasts are always banana on slice of toast with jam
snacks are dried fruit and have a stash of harvest bars left over from school lunches!
Sunday
lunch tuna salad
Tea piece of M&S chicken with carrots new pots and peas
Monday
Lunch meat free falafels (found lurking in freezer) with salad and pitta
Tea portion freezer chilli with rice
Tuesday
lunch 2 quorn sausages chopped into cous cous with onion,peppers and spices
Dinner M&S haddock with mash peas and cabbage
Wednesday
lunch tuna with cous cous and veggies as for tues, with squeeze of lemon
tea meatballs (20p yellow stickered) in tomato sauce with spaghetti (will make 4 portions)with extra veggies
Thursday
lunch pitta egg mayo and salad (may have to buy more salad stuff)
dinner sausage and mash with frozen veggies (will make 3 portions for freezer)
Friday
lunch - tuna mayo with salad and pitta
Tea chicken curry and rice from freezer
Saturday
lunch - bacon and egg with tomatoes and bread
Tea - smoked haddock with peas and cabbage and mash
So have a plan, will report back on how it goes.....can't believe I can make so much from what I have in....if the kids were here they would be saying.....there's nothing in the house to eat!!!January 2020 Grocery challenge £119.45/£200

Well just to report back that I spent 0p!!! Managed to keep the crisp £10 in my purse by swapping the salad on thursday and friday with HM veggie soup. Also lost 2Ilbs in weight, think this was probably due to having more time to walk the dog as not at the shops every 5 minutes.
May have to refine the couscous spice mix as a bit bland but otherwise happy with the results and have enough left to feed several small countries!
and.....have 7 portions of freezer meals too.....for the next time.
Have just had to stop the rising panic at the empty cupboards and fridge....
Ready to face the rest of the month now with £150 to feed the hoards...must head over to the monthly challenge board.January 2020 Grocery challenge £119.45/£200

hi, i have read through all the thread over the last week..........its been very interesting and inspiring, to those of you who still do the store cupboard challenge....can i please join.
also can i ask your advice...chicken stock - from what ive read on here over the last week i think i done it right, here goes....
i have boiled the carcass for about 4 hours with some cellery, carrot and an onion, seived it so i just have a clear stock.
is that correct ? how do you use it ? do you freeze it in portions to add to soups ? as i have never made soup before using fresh stock how do you do yours ? recipes?
i have a slow cooker etc....

Sounds right to me thats how ive done it. I freeze mine in tubs and then when i make soup i add it in where the recipe says to add stock. It melts straight away in the pot. I don't have any slow cooker recipes as i dont have one but stews can be good. I use good food for recipes for soups and stews.MFW 2016 No 68 £1300/£8500 No new toiletries Cook sth different0

I had a brief period of intending to eat more healthy stuff, besides salad and veg.
When I say brief period, I think it lasted from paying for it at the checkout and eating the Greggs pasty in the car before leaving the car park. :rotfl:0 -

I made a bulgar wheat salad yesterday - cooked bulgar wheat, chopped cucumber, orange pepper + green pepper, little chunks of cheese, chopped fresh mint + basil, lemon juice + olive oil - all mixed together.
Kind of a tabbouleh but didn't have al the ingredients so made my ownwas very nice as a packed lunch

I freeze mine in 500ml portions, then use it in soups, casseroles or risottos.0
