  • OK I also need some help.
I have had a bag of sliced Okra in my freezer for at least the last year, its a huge bag. I tried a sort of jambalaya thing with it last year but that was horrid and we all just managed ONE little mouthful, the taste was OK but it was very slimy. I shall not repeat any comments that came my way!

Anyone got a better plan for it?

Thanks very much for the ideas.

Thanks too for the riverford link - I've just printed off a few recipe ideas for cauliflower and swede to use them up!

SanFran - Okra curry - mixed in with something else??

SanFran - I've only tried okra once and wasn't keen - like you, I found it far too slimy. I have since read that it's good breadcrumbed and fried, which apparently gets rid of the slimyness. I haven't yet had the nerve to try it myself, though - I might get round to it one day, when I'm feeling brave!
Back after a very long break!
  • OOW thanks for that, we are having stuffed peppers tonight so could use this as a side veg, I will report back.

    Hi knowledgeable and friendly ones!

I have a cauliflower that needs using up and all I can think of making is cauliflower cheese and if I did this I don't kow what to eat with it?

    Any ideas?

well broccoli and cheese soup is lovely so you could probably sub the cauliflower for the broccoli
this is a link for a non cheesy broccoli soup that states you can replace it with cauliflower
    http://www.eighth-day.co.uk/recipes/sbroccol.htm
this one uses stilton though i will point out i normally use cheddar and sometimes use cream cheese when making cheesy soups http://www.cookuk.co.uk/soup_starter/StiltonBroccoliSoup.htm
another noncheesy broccoli soup http://www.myhouseandgarden.com/recipes/soup_broc.htm and another http://www.bbc.co.uk/food/recipes/database/broccolisoup_76607.shtml

    and now specifically cauliflower soups!

if you don't have cream and they call for it i would recommend using cream cheese or milk and butter to make it creamier tasting, or even greek yogurt.

    hope that helps some

well my first reaction would be to batter and shallow fry them but since you don't like the texture (i do, i enjoy the silky feeling of it rolling over my tongue) then i'd suggest my next favourite thing to do with okra... bhindi bhaji

plenty of recipes came up when i searched for it but here's one to get you started mmm

I use a lot of tinned tomatoes but I think this might be a bit much even for me! Yes, you can freeze tinned tomatoes, either on their own or as part of something else. If you freeze them on their own you can just throw them straight into something like a casserole without defrosting first, I've found (found by forgetting to defrost them until it was too late, of course :o).

  • Thank you CCP for the quick reply, very relived to see that.

LYNZPOWER had a look on the site today, the shelves seem to be quite bare! None of the catering olives, oils, cous cous, nut roasts, mustards, that was around when I was on just a day or two ago, he also has a message on the first page saying that he has a huge backlog of orders, so delays.
Might be best to give it a week or so.
