  • Thanks for the replies regarding the mackerel fillets - will stick to traditional lasagne I think instead of spag bol.

  • not too much of a store cupboard challenge i suppose, but i cleared out various boxes of almost finished cereal today, combined all the open weetabix into one box (bloody Hubby!) and used all the bits in the bottom in some breakfast muffins for him, with a very very black banana added in!

    i will take some into work tomorrow for my staff too :)

    I cant remember who it was that was asking about lasagne sheets ( im sure its been all of us at somepoint!) but I dont like mince ( can you believe it!) and if I have lasagne i have it with quorn mince.

    when I make a non- mince lasagne I make it
    -chicken & mushroom
    -spinach & mushroom
    -roasted med veg

    Have also made chicken ( rubber) spinach, courgette, you name it, its gone in!

    Works well with a tomato based sauce or a bog standard white sauce, i personally prefer white though. :beer:

    Always a good staple for us with left over chicken.

    Also another thing you can do with the sheets is just smash them up and use them as pasta- either in bake or boiling. I went to aresturaunt and this was thier speciality something like lasagne jumble- which was effectively the ragu, with broken lasagne sheets in topped with cheese in a ovenproof dish with melted cheese on.

  • How could I forget - I defrosted some of our HG apple juice that I pressed at the end of the summer. It's now plipping away next to the Rayburn making cider :beer:

    We had lamb at the weekend, roast on Sunday, used the remains of the meat to make a curry for dh on Monday, then yesterday boiled the bones (shoulder joint) to yield a nice pan of stock.

    I fried off some leeks and carrots in butter, added to the stock then added in small diced potato and a couple of handsful of pearl barley.

    THis was then all put into the slow cooker to cook all day. resulting in a lovely scotch broth type soup but without any meat pieces, had some for lunch today and it was delish with hm bread. portion in fridge for tomorrow also and 2 into freezer for another time.

    We had the haggis as planned last night but I deliberately cooked too many potatoes, so these have been fried with some sausages from the freezer and a couple of eggs a piece, for a quick cheap tea as all 3 menfolk have gone to footy.
    My self & hubby; 2 sons (30 & 26). Hubby also a found daughter (37).
    Eldest son has his own house with partner & her 2 children (11 & 10)
    Youngest son & fiancé now have own house.
    So we’re empty nesters.
    Daughter married with 3 boys (12, 9 & 5).

    I also forgot to post about the fruit I took out yesterday :eek:
    4.2kg blackberries
    4.8kg elderberries
    2kg blackcurrants

    This has all been put in a fermenter, along with 500g of dried sloes. I have just added the yeast and nutriet. So hopefully by the morning it will be happily blooping :D

    Tonights tea was a veggie bake.

    I am definately making a dent in the freezer, now most of the fruit is out :D

    Well my storecupbaord is all over the front room in stacker boxes at the mo, and my kitchen is half done now soo wooohooo:j:jCan't wait to get it all sorted at the weekend.In the meantime i'm not cooking as I can't be bothered n the place is a pigsty:D:D

    Had yummy storecupboard tea of sausage pasta, using some sausages out the freezer (making a small dent in there :j !) some passatta that was open in the fridge and various bits of veg and there's enough left for lunch tomorrow!

    Tomorrows night tea is salmon (out the freezer :j) and Friday my friend is coming over :beer:- am hoping M&S are doing their dine in for £10 deal this weekend, if not I've a chicken in the freezer ... will just need to think of pud!

    Have managed so far this week just to buy fruit, a bit of veg that'll keep (morrisons 30p carrots) and cat milk (she's not called Princess for nothing!)... oh yes a pack of frozen stir fry mix fell into my basket in morrisons tonight as it was only 59p :o

    This challenge is focusing my mind - I don't need to keep quite as much in my house as I do!
  • decided against going to shop for eggs as i find it impossible to buy just the thing i went for, so in the end i made a sort of pie thing, chicken and ham with spinach, a can of condensed soup for the sauce and then topped with mash and a little cheese.. like a chicken and ham shepherds pie i suppose.. it was yummy! served it with some garlic bread bites that were use by today and carrots and peas

    so i still have left some ham, the mango, peppers, onion, tomato, salad bag, cheese, pasta, rice, tinned stuff (beans, spaghetti, etc)

    might have to bite the bullet and buy eggs and bread as i cant manage without them! they are the 2 year old's staple!
