in the states the using cottage cheese is a cheaper low fat replacement for ricotta cheese... americans don't use a white sauce in theirs like you do here. in fact i didn't like lasagne here for a long while til i had the yummy stuff from lidl due to this difference.
it really is nice with either cottage cheese or ricotta though, far quicker and easier to make and lower in fat so i def suggest others try it too (well except maybe this week if you have lidl nearby as they have their big lasagnes for only 2 quid this week)

I will aim to eat the cupasoup. I have some supermarket rolls ( or clouds- so full of air its like eating nothing) that were RTC in the freezer, I could do with getting them out- plus will leave a couople for OHs lunch. He will probably take an oxtail soup tin in, with the snacks to go with it.
if you want to make the cup of soup take longer to eat and fill you up a bit more try crushing some ryvita into it (or the cheaper store brand) it's very tasty and much more filling!0 -
Amazingly Confuzzled, I must be the only person without half a packet of ryvita in this thread!
Im not a fan of ryvita at all but I LOVE rye bread,send it to me if you are stuck for ideas.
I have my pack up ready to go another long day on the road for me and the weather- oh my - grim, cold, depressing. I have crisps, cake bar cereal bar and cup soup/ cloud. Im hoping this is adequate, really could do with spending v little today.

CCP - supernoodles are just normal noodles with a sachet of flavouring included. Bin the sachet use the noodles like normal ones. HTH.
i buy the value tesco version of these much cheaper at 10p each but we never use all the flavour sachet (or don't use any if i use them as noodles alone) so i dump all my sachets into an old spice bottle. this makes a lovely spice mix to go on top of meat, spice up a baked potato etc etc and it's free!0 -

I have recently tried this Confuzzled (after watching Barefoot Contessa doing a baked pasta using three cheeses, ricotta, feta & mozarella) and love the ricotta topping on lasagne too.0 -
Lynz do you buy lunches every day then normally? It really is amazing how easy it is to spend money in work. I tend to bring only what I need, so 62p for a coffee. if i have no money, sometimes I bring a lock-n-lock with milk and coffee in - just ready to be topped up with hot water.
You will be amazed how much you save if you can get into the bring a lunch routine. I sort mine out every night for the next day. Todays is leek , christmas ham and potato soup. Drrrooooool.
Made roast dinners for me and two friends last night so used the remains of a bag of sweetcorn and some frozen peas . Have lots of stuff batch cooked to go in , so far 3 portions of leeky soup, parsnip and butter bean going in tonight (3--4 portions), and about 4-5 chicken jalfrezi , plus a WHOLE chicken and two carcasses to make stock with. The stock I made for the two soups was so amazing, I am determined never to throw out another chicken bone without making stock ever again! So easy too.
Also used up end of a bag of onions and end of a bag of peppers.A little nonsense now and then is relished by the wisest men :cool:

Haven't been on here since Sat morning and boy has this thread grown!!
Hurray! Finally did Fish Pie Sat night and it was very nice - still got a bit of fish to use up, so Paella may be on the menu in the next week or so.
Hurray No 2!!! Did the crumble for OH's parents yesterday, so thats the stewed fruit out of the freezer too.
Using one of the Chicken breasts I bought from the butcher on Sat for tonight's tea and the other has gone in the freezer. Tin of condensed soup coming out of the store cupboard tonight for Chicken with tarragon sauce.
Planning a HUGE chutney making session on Thursday night - want to get it all done in one go (OH really does not like the smell). - This will get rid of the rest of the frozen fruit and the frozen peppers.

Thanks very much for all the suggestions for my odd cupboard contents - I'll sit down tonight and work out which I want to do most.
Out of my freezer today came a portion of ham stock, which will go with the leftover roast pork from last night to make a pork and noodle soup which should do me for tonight's dinner and for lunch tomorrow.
I've also got to try to work out what to do with two huge pomegranates which were in my fruit and veg box last week. They're not strictly a storecupboard item but - any ideas, anyone?Back after a very long break!0 -
Hello, thanks for the welcomes 7 suggestions for the left over lamb. I am going to try something tonight. Unfortunately, my millionaire's shortbread was disgusting and had to be thrown away. Don't know what I did wrong but think I got a bit muddled with the quantities somewhere along the way as I was trying to double up to make 2 lots plus I followed a recipe I found on here & it didn't state cooking times or temperatures & I obviously guessed incorrectly as it was yuk! Mind you, I do need very explicit instructions sometimes with cooking & baking, lol!
I attempted carrot & corainder soup in my slow cooker last nite as well but at the moment I have to say it just looks like stock with vegetables floating in it! Will it become thick enough when I put it in a blender or will I have to add cornflour or something to it?
I also have a couple of tins of salmon which are a couple of months out of date. Presume these will be ok to use but again a bit stuck for ideas as I don't really fancy them in sandwiches.
