    If you are not freezing it, once made you needs to be keep it in the fridge or a cold place. If you have no fridge and keep it in a cold place, it should only be kept for a day or two and brought to the boil each day in hot weather. If kept in the fridge, it would still need to be used up within a few days.

    Once defrosted, treat as fresh.

    Small amounts of vegetable stock can be frozen into ice cubes (either in the trays or the bags - if wished, you can 'decant' them after they are frozen into a tub for space saving/stacking purposes) and used for those times you don't need huge/family sized amounts.

    If you made a large amount of vegetable you can 'concentrate' the flavour by boiling it rapidly at the end of it's usual cooking time until it reduces down. If you then freeze that in small quantities, you will have a very concentrated flavour and need to 'dilute' it when using it after defrosting = less storage required ;):)

    Hi Everyone
    Hope this is the right place for this. I am trying to get to grips with my shopping budget using lots of tips from this forum (thanks everyone) before I set my budget for one of the monthly challenges I really need to clear some stuff from the freezer etc so thought I would try a storecupboard challenge for May. Anybody else want to join me?

    I did this in March and it worked really well. I am thinking of doing it again in May as I now have quite a lot of staples and also quite a lot of bargain meat in the freezer, so yes, I'm in! :)

    I'm on board. My budget has been completely shot for the last couple of months & I have some expenses comming up in May so could do with seriously pulling back for a few weeks on food etc. Will do a cupbaord & freezer inventory over the next couple of days.

    I'd like to join, but I ate everything in my store cupboard and freezer last month! We had at least a weeks worth of meals. I went through my cupboards and freezer and wrote a list of everything I had in there. That was really helpful. Also found loads of out of date stuff!

    Me too! I'm really going to try to 'shop at home' first this month (well, May) and I know that I haven't got a lot of useable stuff in the freezer as I've just used the last of the chicken breasts (my big standby!)
