    Hi everyone, :hello:

    Is there room for a newbie? :o:D

    I could really do with using up what I have accumulated over the last few months :rolleyes:. Mostly due to having an allotment but I have also stockpiled a few things when they've been on offer. However, now I'm posed with the problem of no room in the freezer(s) :eek: or cupboards for our Xmas goodies and hopefully some bargains when the stores close over the holiday period. I also need to defrost them badly so I've really got to pull my socks up and use up what's in them :o.

    Most of what I have is soups made from the allotment produce, fruit and veg. There are other odds and ends (pastry, chicken carcusses, more pastry, more carcusses, oh, some more soup ........ you get the idea :rotfl:).

    So, I think I need to go back and read this thread to get some ideas but any advice/help along the way would be great !

    We did have a 'concoction' dinner last night from what needed using up in the fridge (gnocchi, peppers, red onion, courgette, chicken) - fried it all up and added some mixed herbs, a tin of tomatoes and popped a bechemal sauce on top with some cheese. It was rather nice and the kids asked what recipe I'd used :p.

    Anyway, I won't bore you any longer. I shall duly read, digest and take notes while trying to stay up to date with you all :D :beer:xx

    Edit: Ohhhhh I nearly forgot :doh:(not that I could lol) but I'm also doing WW diet at the moment so in the process of using up things, I also need to make it slightly healthy if I can :think:

    FOrgot to mention my delicious storecupboard dish I had last night. DS was having the chilli he missed on Sat night as he was out. I got some hm ratatouille out on Sat but hadn't used it. I warmed it in a dish with some cut up discs of soft goat's cheese, the costco ones. had it with some left over Naan bread. It was soooo yummy!

    FOund that the chorizo in the fridge needs using by beg dec. Got dying peppers from Super6 last week. sounded like the beginnings of Delia's Chicken basque, Found one breast in the freezer, then remembered there were a couple of pork slices there somewhere, ys sundried toms, so made more space.

    (editing...Ha! checked the recipe, so got 2 tubs stock out as well. WHile I was there saw some soup for my lunch. Definitely on a roll!....)

    Dish will make for us 2 tonight, a three for when dh is here and probably some extra for ds to take for lunch. He's really got into leftovers warmed up in the 6th form microwave! Means I don't make as many sandwiches and he doesn't go to the bakery and by loads of pastry carp. everyone is happy.

    Just got tomatoes to use up. Don't feel like they're telling me what I should make at the moment. Wotcha think?

    I don't know the Basque chicken recipe - could you throw some tomatoes into that? Chorizo and toms are lovely together. If not - pasta sauce? Tomato soup?

    Your ratatouille and goat's cheese sounds lovely, BTW. I haven't had ratatouille for a while - I'll have to work that into my meal plan at some point. :think:

    It sounds like soup is a bit of a theme for you (;)) - presuming it's just veggie soup, with no cream or anything, that could be low-fat lunches sorted out for a while. I don't know much about WW but I figure veg soup is healthy enough to fit into most diets, right? :confused: It's tasty, too, which is always a bonus where diet foods are concerned! :D

    My dinner tonight uses up some southern 'fried' mini chicken fillets (actually baked, so they're healthier than they sound), the remains of a can of chickpeas I opened the other day, and a couple of sprouting potatoes which I'm going to turn into jacket spuds (without the sprouty bits, obviously). Must go and put those in the oven, actually....
    Back after a very long break!

    Apparently my Mum got out the embarrassing pics after I left, to show his GF:rotfl::rotfl::rotfl:

    Tonight we had spag bol, so used up a tin of tomatoes;) and one of tom puree as well, shame I forgot to salt it.............:doh:

    Evening all

    Glad to see another member sneaking in under the deluge of frozen oddments! :wave:

    Re the mixer. I had 2x tesco value ones and they both karked it. I think I want "a keeper" mum has a kenwood chef she doesnt use I might see if she wishes to donate ( really dont think so even though she did get it from a car boot)

    The mole sauce is Chocolate & Chilli.- it will be really nice ( Ive had it before) but LH keeps shoving it to the back of the cupboards ( even behind the orange sauce) so I dont think he fancies it ;)

    Just me today as OH is out doing something so posh I wasnt invited ( there will actually be royalty there, its a work thing) so Im slumming it with you lot :p and probably the left overs of last nights chicken & mushroom lasagne.

    I have bought OH a gift for his stocking today- a recipe book- dont you love buying little treats for yourself like this :D cant just be me who does it :D

    The Chicken basque is in the Delia Summer Collection. It has some sundried tomatoes iin it. The ones I used weren't as dried out as the ones from a jar, they came from a supermarket deli counter.

    I've made this loads of times before, but always starting out with the 'right' ingredients, so it was interesting to see that I can make it with some substitutions. I used LG rice not basmati. mixture of chicken and pork instead of a whole chicken,

    DS really enjoyed the meal anyway so I'll put him some in a tub for lunch at school tomorrow.

    Thanks for the lovely welcome :D

    CCP yep, the soup is certainly a big theme at the moment :rotfl:. I have chicken, pea and ham, patty pan (a type of squash/pumpkin) and leek and potato (which is a WW one so that's good news !)

    The only one that could be a bit 'naughty' is the patty pan one as it has cheese in it but not a great amount. It's the bread that goes with it that I have a problem with :rolleyes::o :rotfl:. Have to restrict myself to one roll/slice rather than the usual 2 or 3 :eek:.

    Tomorrow night is oxtail stew (in SC now), potatoes and veg (probably runner beans as I have about 10lb in the freezer still lol). I might do a rice pudding as well :p

    I'm quite into chutney/jam making so once I find the time to make them, there should be a bit more freezer space. Will be giving some as Xmas presents to save a bit of money :money:!

    Right, that's me finished for the evening, dinner cooked, washed up and now going to sit down and start reading from Page 1 :D.
