This recipe is for salmon but I am sure tuna would be just as good -
8oz tin salmon; l lb cold mashed potato; 4 oz grated cheese; flour for dusting; one beaten egg; 4 oz fresh breadcrumbs; oil for frying.
Drain the can of fish and flake in bowl, mix in potato and cheese.
Dust hands with flour (it is sticky!) and divide the mixture into eight portions. Shape into rounds, dusting with flour. Brush with the beaten egg and coat with breadcrumbs.
Chill for an hour or so before frying in heated oil.
Drain on kitchen paper before serving.
Yum!

Great Tuna recipe Happyroly, I've been experimenting too and came up with Tuna Lasagne - Gotta do something to use up all that tuna from the BOGOFs
Mix 2 tins of tuna with a tin of sweetcorn, make a white sauce , mix the tuna in half of it, layer it up with the lasagne put the rest of the white sauce on top, and cover with cheese. Bung in the oven till the cheese has melted and browned. Bon appetit.

I've just joined the grocery & pin money challenges, so thought I'd do this one as well!
I tend to do this near Christmas - use up everything in freezer/cupboard before restocking for Christmas. Then... find some of the things I bought at Xmas months later!!! Sound familiar?
I've odds & ends of pasta, tinned/frozen veg, half packets of loads of things - I'll post some ideas of what we've had over the next couple of weeks.July 2024 GC £0.00/£400

Not read all of this thread but my hubby saves all the 'dust' from the cereal boxes (the bits that go soggy in the milk) and then makes microwave Flapjacks which are very yummy. I think this is his recipe.
3 oz marge/3 oz sugar/4 oz porridge oats (I think he halves this with the cereal dust). Melt butter, stir in sugar/oats and mix thoroughly. press down evenly. Cook for 4-5 mins until skewer comes out clean. Have just found in the rotunda a packet of Paxo stuffing with apple & apricotthink i bought it last year (pre-money saver
) and is out of date this month. Have used it today with the roast chicken. Suppose to be with pork....but wot the heck...live life dangerously :eek:
