I did fairly well with my challenge last month, rotated my stocks and managed to defrost the smaller of my 3 freezers.
Am going to continue again this month as still have things in the big chest freezer which need using up.My self & hubby; 2 sons (30 & 26). Hubby also a found daughter (37).
Eldest son has his own house with partner & her 2 children (11 & 10)
Youngest son & fiancé now have own house.
So we’re empty nesters.
Daughter married with 3 boys (12, 9 & 5).
My mother always served up leftovers we never knew what the original meal was. - Tracey Ulman0 -

i am trying really hard not to throw any food away but i have got a bit slack lately and the wastage is creeping up
have just looked in the fridge and the following veg needs using sooner rather than later:
1 red pepper
1 orange pepper
broad beans
fresh peas
a rather manky looking cabbage (may be walking to the bin on its own)
a couple of carrots
also have pots, onions, garlic, ginger and frozen roasted veg and petti pois. have lentils and some tinned beans too!
was thinking maybe veg curry but am open to suggestions and i dont have a decent veg curry recipe.

Its probably unimaginitive but ive had the same problem today and chucked a load of veg in a huge stockpot with some chicken stock, red lentils, and a couple of tins of tomatoes and some herbs and its lovely, smells gorgous. Am waiting for it to cool a bit and am gonna whizz it all up, gorgous healthy homemade soup for next few days.0

stir fry with the peppers and ginger? and cabbage is surprisingly nice chinese style!What matters most is how well you walk through the fire0 -
How about making a frittata with the peppers and peas it is a filling and cheap meal, or a veggie pie, either top with mashed potato and cheese or pastryBlessed are the cracked for they are the ones that let in the light

I find this to be a good, quick and simple recipe for "sweet" veg:-
Gently fry onion in olive oil until starting to soften
Add 2 teaspoons medium curry powder and fry gently for about a minute
Add 1 tin coconut milk
Bring to the boil
Add chopped peppers, 1 carrot, broad beans and peas
gently simmer for 10-15 minutes (until veg is cooked to your taste)
If you have it, add some chopped fresh peach or mango at the end of cooking and just warm through.
Leftovers can be kept in the fridge for a couple of days. I've not tried freezing it though.
Serve with boiled potatoes, rice or any other grain
Then the cabbage I would stir fry with the other carrot, some onion, fresh ginger and a tin of kidney beans (or similar), adding a splash of soy sauce when served.

hi, im new to money saving.. Been reading on site for about five months, but decided to join up yesterday. Gona join on to the store cupboard challenge and would like to do the home made hampers too.. Also have a few things in my cupboard that i gave ni idea wot to do with, mainly tinned crabmeat and polenta. Hoping some one would point me in the right direction. Thankyou in advance0

I have never used polenta so can't give you any advice but this thread may help:

I love crab meat! My favourite way to eat it is with salad and crusty bread, but you could use it to make crabcakes (like fishcakes but using crab meat), crab spring rolls, crab quiche, seafood chowder, seafood pasta sauce, lasagne or savoury pancakes.

thankyou pink winged. Crab salad sounds lovely, ive not had crab before.. Is there a certain way u do u salad, dressing etc? Im gona go and buy a crusty load and we'll have that for dinner tomorrow night. How do i find where u put my msg? Should i just look through store cupboard forum til u find it?
